Today is a "Catch-All" Day...

Today's blog, I will admit, is not very organized. I have many things to share, but none of them seem to go together! Here's my list:

1. Go Hawkeyes! You better beat Georgia Tech tonight. Even little man, is sporting the gear:)



2. Happy Birthday to Dukie, our black lab, he turns 5 today....or 35 in dog years. He is a typical lab that keeps us on our toes daily.

3. Pizza Burgers and Spicy Chicken Stir Fry - two meals that don't go together at all but is what we have eaten the last two days.

So, on to the meals. I grew up eating pizza burgers. Not sure if my mom made up the recipe, or if she got it from someone, but they are so easy and for some reason really, really good. If you have kids that are picky, I'm sure they would gobble these down in a heartbeat. As for the stir fry, yesterday I was craving vegetables, and if you know me that is not usually the case. Chocolate, yes. Cookies, yes. Vegetables, usually NO. But for whatever reason it happened. So I made stir fry!

Pizza Burgers

1 pkg. english muffins, split
1 lb. ground beef, browned and drained
3 slices Velveeta cheese, cubed (I use the lighter version)
1 c. pizza sauce
Mozzarella cheese

Preheat oven to 350 degrees. Brown hamburger and drain. Add in pizza sauce and Velveeta cheese. Mix together until cheese is melted. Split english muffins and place on foil covered baking sheet (makes for easier cleanup!) Spoon hamburger mixture on muffins. Place in oven for 10 min. or until just heated through. Take out of oven and top with mozzarella cheese, return to oven to melt. Spicy Chicken Stir Fry

2 boneless, skinless chicken breasts
1/2 bag frozen broccoli florets
1 c. carrots, sliced
1 c. sliced mushrooms
1 pkg. Sunbird Hot & Spicy Szechwan seasoning mix
3 T. light soy sauce
1 T. hoisin sauce
1/4 c. water
1/4 t. red pepper flakes

Combine seasoning mix with soy sauce, hoisin sauce and water, set aside. In hot skillet or wok, add meat until browned. Add all vegetables, minus the mushrooms, and saute until tender, but still have a little bite to them. Add mushrooms. Add seasoning mixture and combine for about 1 minute or until mixture thickens. Serve over brown rice.
