Taco Salad, Guest Blogger & Giveaway!

First off, thanks for all your great comments yesterday about eating dinner around your kitchen or dining room table. There are some strong opinions out there! But, for very good reason.

Studies have shown that children who eat dinner on a regular basis (at the table) with their family, do better in school, are less likely to get into trouble, and have a general overall healthier attitude!

In case your wondering, it's 2 nights in a row now for us:)

A few nights ago it was taco salad night at our house. On my last grocery store adventure they had bagged iceberg lettuce on sale for 99 cents! Can't beat that. Although, I prefer buying lettuce in head form or in bundles, I just couldn't pass up this deal.

The first thought that came to mind was taco salad. I hadn't made it in ages, and it's such a simple and easy meal to throw together. The recipe I use (below) says to mix it all together and serve family style....but in our house we each have a different idea of how much "dressing" needs to go on the salad. So, I made it into a taco salad bar. That way we both were happy.


Taco Salad
1 lb. lean ground beef, browned/drained
1 bag iceberg lettuce
1 chopped tomato
1 c. shredded cheddar cheese
1 c. snob salsa, 1/2 c. also set aside
1/2 c. light Western dressing
sour cream
crushed baked tortilla chips

Cook ground beef and drain. Mix 1/2 c. snob salsa into meat. Place lettuce into large bowl, add ground beef mixture, cheese, tomato and Western dressing. Toss to coat. Upon plating, add additional salsa, sour cream, or crushed tortilla chips.

  2. Wow, I didn't know that about kids eating at tables! We grew up eating every night around the table as a family. I never thought anything of it b/c my friends always did the same. J's family never did - they all ate at their own times, w/e the wanted, and scattered around the house. I plan on having my one-day family eat around the table too. I loved checking-in w/ the family ea. night w/ the TV off and telling about school, dance, etc.

    The taco salad looks delicious! I haven't made anything taco in awhile either! I never remember to get all the toppings or shells so I do rice and beans or something semi-Mexican.

    Question: Do you rinse your bagged salads? My husband thinks I should, but I assume that it already is?

  4. I will admit, I do not rinse my bagged salads. I've been under the impression that they are already pre-washed, but I'm sure someone will correct me on this....any takers?

  9. I don't rinse my bagged lettuce, either! I thought if it was a kit like that already cut and everything, they probably washed it. Plus, I think I remember seeing one said "triple washed," so I just assumed all were? If it's the bagged whole heads of romaine then I wash b/c they're gritty - other than that I don't!

    I am so sorry for the title...you can erase comment if you want. But it sure makes you think! When I buy bagged lettuce(only if the price is right) I never wash it either...I read somewhere long ago that a little bit of salad dressing kills what ever bad stuff on it anyways! :)
