Candy Bar Pudding Cups


What to do with endless amounts of candy bars in your house, due to overloaded Christmas stockings?  Throw them into cookie batter.

At least that was my solution this week.


Crumbled up kit kat and snickers bars got sliced and diced and dumped into a mess of butter, sugar and flour.  I'd have to say it worked out rather well.  The little man and I kept a few at home, I packaged some up for work and took the rest in this pretty little box to daycare.

I'm sure the other mothers just love me.


Candy Bar Pudding Cups
1 c. butter, softened
1 pkg. French Vanilla dry pudding mix
1/2 c. sugar
2 eggs
2 1/4 c. flour
1 c. oats
1 t. baking soda
1/2 t. salt
2 c. chopped up candy bars

Preheat oven to 350 degrees.  Cream together butter, sugar and pudding mix.  Add eggs, one at a time to combine.  Stir in vanilla.

In a separate bowl combine flour, oats, baking soda, salt and gradually stir into wet mixture.  Fold in candy bar pieces.  Place by large spoonful into greased mini muffin tins.  Bake for 12 minutes, let cool in pan for 2-3 minutes, then remove to finish cooling on a wire rack.

I'm curious what are you goals for 2012?  I've got a few.
  1. Get organized.  Our house is small and sometimes I just feel like it is collapsing upon us.  I want to take some ideas from Pinterest and in return incorporate them into our house.
  2. Start moving.  I need to get moving more after the birth of baby #2.
  3. Continue to develop this food blog and hopefully reach out to an even bigger fan base.
  4. Stick to a budget.  Enough said.
So...what are your goals?
