Carrot Cake Crinkle Cookies

I've been making these Carrot Cake Crinkle Cookies for 10 years!
A carrot cake mix makes these unbelievably simple. Just four ingredients needed total.

As mentioned above I first made these easy cookies over 10 years ago! When a cookie recipe stays around this long you know it's a good one. At the time I had really little kids and I'm imagining I needed all the shortcuts I could find.

This cookie recipe only has four ingredients!

Hard to believe I know. But trust me when I say it works. They are the perfect cookie for Spring (even better for Easter) as they are easy and light...just how Spring should feel.

The main reason these cookies have minimal ingredients is because the main ingredient is a boxed carrot cake mix. That right there takes out most of the work!

All of the spices and leavening agents are all ready in the cake mix resulting in less work for you. The rest of the cookie is brought together with an egg and sour cream (and powdered sugar of course at the end). It really is the best cookie!

Soft, chewy and full of carrot and spice flavors.

It's no secret I've used cake mixes as shortcuts in a variety of my recipes throughout the years. Do you remember these?

Why are these called Crinkle Cookies?

Just look at the tops of the cookies after they are baked! It looks like dry earth that desperately needs a drink of water. After rolling the cookie dough in powdered sugar, you bake them and naturally the cookies spread which reveal "cracks" on tops of the cookie.

The result is a super soft cookie with a chewy middle and a sweet outside coating. Personally I kind of think that roll in the powdered sugar makes the cookie!

Per usual, my kids loved this cookie!

But honestly they enjoy ALL cookies. Anything carrot cake related this time of year gets rave reviews from the crowds. This is the perfect cookie to take to Easter, graduation parties or Spring potlucks. Bring a tray and watch them disappear!
