Cake Mix FUNFETTI Cookies


Ever want to make cookies with your kids but then think....I would rather sever my big toe with a butter knife than get out all the ingredients, form the little rascals into balls and wait for the 3 different pans to bake.

Yeah, I sometimes feel that way.

I love to bake but some days I would rather sever off my big toe with a butter knife.  It just seems like a lot of work.

But these cookies?  They are easy.  Open up a boxed cake mix, throw a couple of things in, mix and plop onto the pan.  It doesn't make dozens and dozens like some recipes so you are in and out of the kitchen in under 30 minutes.



We made these over the weekend while we were watching one of our friend's daughters as well.  Our kids LOVE having playdates, so after naptime while the Little Man was still sleeping {rare} the girls and I baked cookies.

On the hottest day of the year.

But we had fun.


And what kid doesn't like sprinkles?  Heck, what adult doesn't like sprinkles?  At dinner last night the husband said, "I'm not sure what kind of cookies those were sitting on the counter, but as you could probably see I had about 6 of them when I got home last night."

Yep, I saw the evidence.

But it's okay, because that meant less cookies to stare at me in the face.



Cake Mix FUNFETTI Cookies
{Print this Recipe!}
1 box Funfetti Cake Mix
1 pkg. instant vanilla pudding mix
2 eggs
1/2 c. oil {olive, coconut, canola, etc.}
1 t. vanilla

Preheat the oven to 350 degrees.  In a bowl combine all ingredients until a soft dough forms. Place by the spoonful on a parchment lined cookie sheet.  Bake 8-10 minutes until just barely golden brown.  Makes 2 dozen.



This recipe could be used for any flavor of cake and pudding mix.  Just think of all the combos!  But, lets admit sprinkles are just a whole lot of fun.

Enjoy the rest of your holiday weekend {who doesn't love an extra day off?}.  We are debating between boating and a simple grill out with friends.  I'm opting for the latter.

  1. Confession: Funfetti icing is my favorite thing EVER, I love the little rainbow dot sugar things. I bet these cookies are amazing.
