Biscuits & Gravy Breakfast Casserole

This past week has been memorable.

I won't go into too many details, but let's say it involved fevers, runny noses, sleepless nights, food poisoning and half of the family missing out on a family Christmas.

I was never so thankful to get out of the house yesterday just to pick up a carry-out pizza.  It was bone-chilling cold, down right freezing and the car took forever to warm up, but that ice chilling air seemed to do me some good.  Have you ever been stuck inside a {small} house that you feel is coated in germs?  Here's to hoping that cold air killed them all off of me.

The pizza was fabulous by the way.  Just what this family needed.

Prior to all of this holiday hoopla, I made this new breakfast casserole on Christmas morning. I'm sorry to hear some of you aren't fans of eggs or breakfast dishes because you are really missing out!  I put this together on Christmas Eve and forgot about it until I woke up the next morning.

Some of our stand-by egg dishes include this 3-Meat Breakfast Pizza or this Amish Breakfast Casserole but I wanted to do something different.  I knew the husband loves biscuits and gravy and being the poor, pitiful wife I am, I have never made them for him. Never.  So here was my chance for bonus points.

It was a hit!

A big hit with him.  Our oldest is hit or miss about eggs, but I bribed him with bacon as a side, so he ate it reluctantly.  The rest of us were super fans.

With just six ingredients and some seasonings, it couldn't be easier.  It has that bit of peppery kick from the gravy and the biscuit bottom makes it fluffy and tender.

Your two year old could probably make this...just layer away!  Cut up biscuits, cooked sausage, cubed cheese, pour on the egg/milk mixture and spoon on the prepared gravy.
