When each year ends, I love taking a look back and seeing what recipes took off and which ones died an ugly death.  I've found you can't please everyone!  And as always, many surprise me.

What?  That dish didn't go over well?  We loved it!  Or - how in the bloody heck did that one get hundreds of shares...I literally didn't plan a lick of it and threw it together on a whim.  It just goes to show you never know what people are in the mood for.

So cheers to 2017!  Let's take a look back at the year and see what was popular, and five extras that just squeaked by making the top 10.  If you are reading this, THANK YOU from the bottom of my heart.

#10 Zesty Spaghetti Salad.  I made this pasta salad for the first time this past summer and I'm not ashamed to admit, I've made it 267 times since.  My middle daughter LOVES it.  I love it.  Honestly, I could probably eat it as a meal.  What's fun about it, is that each and every time I whip it up it comes out different.  Sometimes I add black olives, sometimes I add diced pepperoni.  Often I go heavy on the shredded Parm {because, hello, Parm} and sometimes I add sliced green onions.  Whatever you have on hand in your fridge works.

#9 Chicken & Spinach Stuffed Shells.  Top pasta dish of the year!  My local friends and I recently had a freezer swap {you make multiple pans of the same dish, gather with friends, then swap} and I brought this dish.  It has become a family favorite. I've since had those said friends text me and say their family raved about this one - including the kids!  And it's includes green stuff {spinach}, so I'm giving this one a BIG win.

#8 Strawberry Swirl Sweet Rolls.  Aren't these beauties pretty?  They kinda scream happiness in my opinion.  These came in second for breakfast.  Did you know you can actually make cinnamon rolls in an hour?  Feel free to spread any fruity jam in between these doughy layers, strawberry just happens to be my favorite.  I often make these in three disposable pans and deliver two of them to friends!

#7 Homemade Pumpkin Pie Spice Coffee Creamer.  This homemade coffee creamer went crazy over the Fall months when everyone is gaga over anything pumpkin pie spice.  It's super simple to make and lasts for a good week in the fridge.  All coffee lovers will love this one, especially those of you who enjoy doctoring up your coffee a little {like me}.

#6 Hot Cast Iron Skillet Herbed Bread with Spinach Artichoke Dip.  A friend commented last week on my Facebook page that she has made this appetizer three times already!  It's that good.  Any skillet works, as long as it is oven proof - as baking both the bread {dippers!} and the dip in one pan is genius.  I plan on making this for New Year's Eve.  It can be prepped ahead and taken to whatever party your attending, thrown in the oven, ready in just 20 minutes.

#5 Holiday Gift Guide: 20 Gifts for Under $20.  People love help when it comes to shopping, especially during the holidays.  So many people to buy for!  This list was a fun one as I hand picked 20 items that are budget friendly.  I still want to buy myself {they are saved in my Amazon cart for checkout} the elephant bookends and the cute camera strap.

#4 20+ Valentine's Day Treats.  Guess what major holiday is next?  Yep, Valentine's Day.  This list contains both salty and sweet items from sweet breads to mini pizzas to funfetti popcorn.  Whether you have a sweetheart or not, I feel it is still fun to bake for your kids or invite loved ones over, just because.  Come late January {or now!} browse through these selections and find one that is perfect for you.

#3 5 Minute BLT Frito Dip.  I first created this dip pre-summer of this year anticipating pool parties and summer picnics.  And wowza, did it go over well!  Here's the thing it's great anytime of the year.  Filled with all your BLT favorites, it's creamy, salty, cheesy and pretty darn delicious.  But only eat with Fritos, I repeat, only Fritos.  It makes the dip.

#2 Amish Breakfast Casserole.  This is our new favorite egg dish.  I made it for our Christmas morning breakfast and even my 8 year old boy who would sometimes rather do extra chores than eat eggs, eats this one.  There is one secret ingredient.  It makes the dish.  The addition of onion, bacon and sometimes when I'm feeling frisky, ground sausage all comes together for the perfect breakfast.

#1 Meal Plan: 2 Weeks, 5 Mouths, All for Under $115.  After being a food blogger for 8 years, I've learned a few things.  What I've learned is that come January, once the holidays are past us, people want meal plans.  They want to get organized and get back on track {say goodbye Christmas cookies!}.  Moms especially feel the need {me included} to plan, plan, plan and attack the new year with avengance.  This blog post clearly won all the awards.  It's easy, budget-friendly and included all our favorite meals.

Golly, I realized when I woke up this morning that it was just 3 more sleeps until Christmas morning.  Can you believe it?  By this time I hope you have all your shopping done, the presents are wrapped and you are relaxing.

I'm trying.  Yesterday was the first day of school break and despite the four fights I broke up prior to 9 a.m., it was a pretty good day.  We had a hearty, big breakfast, ran some last minute errands, went out for lunch and then came back for naps {or cookie baking or me} and ended the day with burgers on the grill.

Because I'm still grilling due to waiting on our first significant snowfall.  Where is the SNOW?  Even the south has seen more snow than us.  Ugh.  I hate not having a white Christmas.

Let's talk cookies!

Okay Moms, I've been there.  It's Christmas Eve and you realize you have no pretty cookies to set out for Santa.  Plus you're tired and all you really want to do is get the kids tucked in bed before the chaos ensues in the morning.

Guess what?  These Santa Meltaway Cookies are done start to finish in 30 minutes!  Plus, double yay, they make a small batch - just 20 cookies.  At a time when you are most likely already overeating, who needs another HUGE batch of cookies in the house?  I love that this recipe is simple, uncomplicated and delicious.

Did I mention they contain no eggs?  Super simple, they literally melt into your mouth.  They taste in between a piece of shortbread and a sugar cookie.  Pretty darn perfect I'd say!

Yield: 20 cookies

Santa Meltaway Cookies

prep time: 10 MINScook time: 10 MINStotal time: 20 mins
Start to finish in just 30 minutes - these are perfect to throw together quickly on Christmas Eve!

ingredients:

Cookie Dough
  • 1 1/2 sticks butter, unsalted and softened
  • 1/2 c. powdered sugar
  • 1/2 c. cornstarch
  • 1 t. vanilla
  • 1/2 t. salt
  • 1 c. flour
Icing
  • 3/4 c. powdered sugar
  • 1 T. almond extract
  • 4-5 T. milk
  • Christmas sprinkles

instructions:


  1. Preheat the oven to 350 degrees.  Lightly grease a cookie sheet and set aside.
  2. In a stand mixer or hand held mixer cream together the butter and powdered sugar.  Add in the cornstarch and vanilla, creaming together.
  3. Sift the salt and flour together and add to the batter.  Scoop dough out into balls and place on the cookie sheet, then flatten the balls out with the underside of a cup dipped in powdered sugar.
  4. Bake for 10 minutes.  Allow to cool on a wire cookie rack.
  5. To make the icing, whisk together the powdered sugar, extract and milk.  This should make a medium to thin glaze, adding more milk if you need to thin it out.
  6. Place a small spoonful of icing in the middle of the cookie and add sprinkles.  Allow glaze to harden.

Whew!

The last couple of weeks have been a whirlwind.  My 12 Days of Holiday Giveaways was a smash.  I'm just over the moon on your response.  Thank you, thank you, thank you for entering, sharing and enjoying those posts as much as I did.

On the other hand - it was a LOT of work.  Posting every day for 12 days straight must have gotten to me, as somewhere around Day 4 I came down with what I can only call as the plague of 2017.  It was the head cold of all head colds and it was attacking every person in the house.  At one point I figured pounding my head against the wall might make me feel better.  It was that bad.  But, I got throught it and by Day 7 or so I was back on track.

So, I made it!

So, who is ready for the holidays?

My gifts have been bought, wrapped and I'm READY.  It feels so good to be done and now I can sit here and enjoy what truly is one of the greatest times of the year.  Last night we took the kids to dinner and then rode around and looked at all the Christmas lights.  The squeals and laughter from the back seat was just the best.

Aside from the kiddos, who is attending a family dinner or holiday party?  We have a few to attend and these Holiday Appetizer Toasts are so fun and just perfect.  Really, you can top them with whatever you want, but I came up with four festive toppers and they are delicious.

I found these simple cocktail sized pumpernickel bread slices at the grocery store.  They also had a rye version.  Or feel free to cut up a hearty baguette, really any small sliced bread works.  Just make sure it can be toasted in the oven to get crispy!

Here are my four toppers:
  • Cream Cheese & Raspberry Jam
  • Pesto & Mozzarella Cheese
  • Cream Cheese, Grape Tomatoes & Dried Oregano
  • Brie Cheese & Spicy Chili Jam
I love making a topper that is both sweet and spicy, or tangy and sweet or really just anything that has opposite affects!

You put these little toasts on a holiday platter and walk into a room and I can bet you'll be flooded with hands grabbing one here and there.  They are so good!  Toast up the bread for just a few minutes drizzled with a little olive oil, spread with the toppings and serve at room temperature.  They'll stay good for hours!



Yield: 30 servings

Holiday Appetizer Toasts

prep time: 10 MINScook time: 5 MINStotal time: 15 mins
These simple holiday toasts are the perfect appetizer! Four different varieties will please any palate.

ingredients:


  • 30 thin slices of cocktail pumpernickel bread
  • jarred pesto
  • raspberry jam
  • spicy chili jam
  • grape tomatoes, sliced in half
  • cubed mozzarella cheese
  • sliced brie cheese
  • cream cheese, softened
  • dried oregano
  • olive oil

instructions:


  1. Preheat the oven to 400 degrees.  Arrange the pumpernickel slices on a large rimmed cookie sheet.  Drizzle with olive oil and toast for 5 minutes.
  2. Spread on the 4 varieties of toasts: softened cream cheese/raspberry jam, pesto and cubed mozzarella cheese, softened cream cheese, slice graped tomatoes and dried oregano and slice brie cheese and spicy chili jam.
  3. Arrange on a platter and serve at room temperature.

Feel free to use any small, sliced bread in replace of pumpernickel.

Of all breakfast items pancakes are probably my favorite.  I'll eat them any and every way, I never judge.  Some of my favorites that I've featured over the years include my Lemon Ricotta Blueberry Pancakes, this Caramel Pecan version, this silly upside-down apple bacon pancake and the ones where I mix yogurt and oatmeal into the batter.

Do you ever want pancakes, but don't feel like standing at the kitchen counter to hover over a skillet for the next 20 minutes flipping and serving?  At least, that is what happens in my house.  This mom usually eats last after everyone else is served.

That is why I wanted to create a PANCAKE CASSEROLE I know, genius right?  It has all the flavor, taste and consistency of a pancake, but it is baked all at once and allows the family to sit down together.

I stuffed this one with raspberries, some lemon zest and tangy buttermilk, then topped it with a crumbly brown sugar topping right before baking.  We ate it warm dusted with powdered sugar and drizzled with maple syrup.

Raspberry Streusel Pancake Casserole

This decadent breakfast dish gives you pancakes without the hassle. A tender, soft pancake-like cake is studded with raspberries, lemon zest and the tang of buttermilk.

ingredients:

Crumb Topping
  • 1/2 c. flour
  • 3 T. brown sugar
  • 3 T. sugar
  • 1/2 t. cinnamon
  • 1/4 t. salt
  • 4 T. unsalted butter, chilled and cubed
Casserole

instructions:


  1. Preheat the oven to 350 degrees.  Grease a 9x13 baking dish and set aside.
  2. To prepare the crumb topping, in a bowl combine all the dry ingredients.  Drop in the chilled, cubed butter and using a pastry blender or fork cut into the flour mixture until it resembles coarse crumbs.  Refrigerate until ready to use.
  3. In a large bowl whisk together the eggs, buttermilk, melted butter, zest and vanilla.  Sift in the pancake mix and stir until just combined.
  4. Pour batter into the greased dish.  Top with the raspberries, then sprinkle with the reserved crumb topping.
  5. Bake for 45 minutes or until lightly golden and the edges begin to pull away from the sides of the pan.
  6. Cut into squares and serve warm with powdered sugar, maple syrup and additional raspberries.
