Everything Cookies

Who wants to join me for a spot of tea?  And a cookie?  A really good, can't-just-eat-one cookie?  I knew you'd say YES.  I mean, an invitation with a food blogger for tea, cookies and some lovely chit chat is hard to pass up.

These cookies have a bit of a back story so hang with me here.

I've always been a T.V. lover.  Now, I've had periods in my life where not much was watched {hello, three babies in five years}, but I do try and sit down to one of my favorite shows at least once a day. Call it laziness or call it dedication.  Whatever you prefer.

I'm currently binge watching Friday Night Lights.  I'm loving this show.  Because, hello football. Life drama. Passionate cast members.  And let's be honest Tim Riggins is pretty nice to look at.  A few months back it was Parenthood.  I'm not sure what is next, but send me some options!

I also will dabble in many HGTV home makeover shows and the occasional BRAVO reality series. Many of them make me cringe but I did start watching Ladies of London last year.  I spent three days in London back in high school and would love to go back.  Two of the cast members on this show are from the States so naturally it was fun watching them live in another country.

Marissa Hermer is one of those Californian Expats.  Hailing from the world of avocados, granola and all things healthy eating, she until recently called London home with her husband and three kiddos {they have since moved back to CA}.

This story continues as one day I was scrolling through Instagram and saw that Marissa, herself, had started following my account!  God bless her.  Then upon scrolling through her account it was easy to see that she was writing a cookbook.  God bless her again.

I casually watched the process {many say it is like birthing another child} and when I received an email from her PR firm asking to review her cookbook and test a recipe I was sold!

Reading cookbooks is fun for me.  Hell, reading is my second past time!  One day when it was gorgeous outside, I brewed a cup of tea from the amazing batch they sent me, plopped myself on a deck chair and read this straight through in just over an hour.

I marked about 15 recipes that I wanted to make then narrowed it down to about five {all of which I had everything on hand for}.  Then finally decided to showcase her Everything Cookies for you guys. Because....cookies!  I knew if I tackled a batch of these they'd be gobbled up before I had a chance to even turn round.

I'm not kidding when I say these just might be my favorite NEW go to cookie.  It is virtually impossible to just eat one.  In fact the husband randomly came home for lunch the day I made these and ATE FIVE.

Five.

I made these fairly large as they do spread a bit and it gave me a healthy three dozen.  I debated handing out some to the other moms at ball practice that night...but then quickly realized that would be silly.

Why give these away?  

I'd rather hoard them for myself.

To keep in my purse for emergencies.

I do think these cookies are a perfect combination of the U.K. and the U.S.  Hearty, studded with milk chocolate, oats, raisins and nuts.  Ideal with a cup of hot tea or coffee.

Everything Cookies

Print this Recipe!
*from An American Girl in London cookbook

3 c. old-fashioned oats
1 t. cinnamon
1 c. flour
1 t. baking soda
pinch of sea salt
1 c. unsalted butter, softened
1/4 c. peanut butter
1 c. brown sugar
3/4 c. sugar
2 eggs
1 t. vanilla extract
1 1/2 c. raisins
1/2 c. pecans, chopped {original recipe uses walnuts}
1 c. chocolate chips

1.  In a bowl combine the oats, cinnamon, flour, baking soda and salt.
2.  In a stand mixer beat together the butter, peanut butter and sugars until light and fluffy. Gradually add in the eggs and vanilla, mixing until combined.
3.  On low speed add in the dry ingredients.
4.  Fold in the raisins, pecans and chocolate chips.
5.  Chill the dough for at least 1 hour or overnight.
6.  Preheat the oven to 350 degrees.  Line a baking sheet with parchment paper.  Drop by heaping spoonfuls, rolling into balls on the sheet.  Bake for 12 minutes or until golden brown on the edges. Cool completely on a wire rack.

  2. I haven't had the opportunity to travel outside of the US yet. France has always been on my list, and I really want to take the family on a missions trip to Uganda. Some day :)
