Whew!

The last couple of weeks have been a whirlwind.  My 12 Days of Holiday Giveaways was a smash.  I'm just over the moon on your response.  Thank you, thank you, thank you for entering, sharing and enjoying those posts as much as I did.

I'm already excited for next year!

On the other hand - it was a LOT of work.  Posting every day for 12 days straight must have gotten to me, as somewhere around Day 4 I came down with what I can only call as the plague of 2017.  It was the head cold of all head colds and it was attacking every person in the house.  At one point I figured pounding my head against the wall might make me feel better.  It was that bad.  But, I got throught it and by Day 7 or so I was back on track.

So, who is ready for the holidays?

My gifts have been bought, wrapped and I'm READY.  It feels so good to be done and now I can sit here and enjoy what truly is one of the greatest times of the year.  Last night we took the kids to dinner and then rode around and looked at all the Christmas lights.  The squeals and laughter from the back seat was just the best.

Aside from the kiddos, who is attending a family dinner or holiday party?  We have a few to attend and these Holiday Appetizer Toasts are so fun and just perfect.  Really, you can top them with whatever you want, but I came up with four festive toppers and they are delicious.

I found these simple cocktail sized pumpernickel bread slices at the grocery store.  They also had a rye version.  Or feel free to cut up a hearty baguette, really any small sliced bread works.  Just make sure it can be toasted in the oven to get crispy!

Here are my four toppers:
  • Cream Cheese & Raspberry Jam
  • Pesto & Mozzarella Cheese
  • Cream Cheese, Grape Tomatoes & Dried Oregano
  • Brie Cheese & Spicy Chili Jam
I love making a topper that is both sweet and spicy, or tangy and sweet or really just anything that has opposite affects!

You put these little toasts on a holiday platter and walk into a room and I can bet you'll be flooded with hands grabbing one here and there.  They are so good!  Toast up the bread for just a few minutes drizzled with a little olive oil, spread with the toppings and serve at room temperature.  They'll stay good for hours!

Holiday Appetizer Toasts

These simple holiday toasts are the perfect appetizer! Four different varieties will please any palate.

ingredients:


  • 30 thin slices of cocktail pumpernickel bread
  • jarred pesto
  • raspberry jam
  • spicy chili jam
  • grape tomatoes, sliced in half
  • cubed mozzarella cheese
  • sliced brie cheese
  • cream cheese, softened
  • dried oregano
  • olive oil

instructions:


  1. Preheat the oven to 400 degrees.  Arrange the pumpernickel slices on a large rimmed cookie sheet.  Drizzle with olive oil and toast for 5 minutes.
  2. Spread on the 4 varieties of toasts: softened cream cheese/raspberry jam, pesto and cubed mozzarella cheese, softened cream cheese, slice graped tomatoes and dried oregano and slice brie cheese and spicy chili jam.
  3. Arrange on a platter and serve at room temperature.

notes

Feel free to use any small, sliced bread in replace of pumpernickel.
