Creamy Avocado, Tomato and Bacon Pasta Salad


Did everyone have a nice Labor Day?  Surprisingly, the husband had the day off and we actually got to act like a normal family and attend an event together.  {Hear the bitterness in my tone?}  Really, we had a nice day and it took all the effort in my being to throw my legs out of bed this morning at 5:15 for my morning walk/get ready for work/get kids to daycare routine.

We were tiiiiiirrrrrrreeeeeeeed.

But we did get to spend some nice time with friends last night for a Labor Day barbecue. The kids ran wild, the ladies held babies {three newborns!} and the boys manned the grill.  And we all indulged in a drink or two.

And I brought this killer pasta salad!


This pasta salad ranks right up there with my Deviled Egg Pasta Salad {another great one}, but honestly this one reminds me more of summer with the fresh tomatoes, avocados and bacon.  The bacon makes it!  And I brought leftovers for lunch.....I cannot wait.

Creamy Avocado, Tomato and Bacon Pasta Salad

3/4 lb. elbow macaroni
2 large tomatoes
6 strips of bacon, cooked
1 large avocado
1 c. mayo
juice of one lemon
1 1/2 t. dried dill
1 t. garlic powder
1 T. salt
1 t. pepper

Cook pasta until al dente.  Drain, rinse with cold water and allow to cool.  Meanwhile mix together the dressing - mayo, lemon juice, dill, garlic powder, salt and pepper.  Chop up the tomatoes {draining some of the seeds/juice} and add them to the cold pasta.  Toss in bacon and pour in dressing - tossing to coat. Refrigerate if not serving right away {up to a few hours}.  Right before serving add in chopped/slightly mashed avocado, tossing to coat.

Taste, adjusting seasonings if necessary.

We have a busy week in this house.  The Little Man starts preschool tomorrow.  He is beyond excited.  This mama?  A little bit sad, but pretty excited for him - he is ready.  

Then the kids head off to their grandparents for the weekend.  I'm planning on getting a ton of stuff done on this blog, having dinner with some girlfriends and RELAXING.

I cannot wait.
