Stuffed Thin Mint Chocolate Cookies

Want to waste three hours of your life like I did?

Do a Google image search of Girl Scout desserts.  Your computer screen will be full for daaaaaaaays and you'll just keep scrolling and scrolling and scrolling.

All of the photos will be drool worthy and probably 100x more fabulous than mine, but believe me when I tell you my cookie will taste better than ALL of their cookies.

And here is something you don't know about me.

When hugely pregnant with my second child I would eat thin mints by the SLEEVE at my desk at work.

So this time of year brings good and bad memories.

Good: Eating thin mints by the pound.

Bad: Eating thin mints by the pound.

We all have our bad moments and clearly, this phase in my life was one of them.  At least my breath was minty fresh at work!

Since then, I usually limit myself to two, rather than 20 {how many are actually in a sleeve? I'm sure I knew the precise number back in 2011}.

When the Girl Scout gods came calling a couple weeks back I timidly raised my hand like the shy girl in the back of the class and ordered 4 boxes.  When I handed my $16 dollars over like drug money I came home and quickly threw all of the boxes in our deep freeze.

Out of sight out of mind, right?

That lasted about a week.

Then I remembered I needed to send my nephew in Minnesota his February dessert care package. This is the kid who at age 6 was ordering EVERY VEGETABLE on his sub at Subway.  He truly is a foodie at heart and doesn't have a lot of dislikes.

For Christmas we gave him a gift card and a promise of three months of desserts.  This cookie was month two.  I gave him three choices {I can't even remember the other two now}, but in the end the promise I gave him of stuffing a thin mint cookie into ANOTHER chocolate mint cookie won him over.

I mean, hell, I was salivating just texting out that description.

So to the laundry room I traveled where our deep freeze is and I pulled out one box of thin mints.  I got to work on this thick, rich dough and only ate two of the darn things.

Such a victory!

These cookies are big, huge in fact.  It is pretty much a double cookie, but it looks like a single cookie, if that makes you feel any better.

This recipe only makes 10 cookies.  Does that give you a hint at how big they are?  I kept one for safe keeping {ahem, taste testing} and quickly shipped the rest off to Minnesota as quick as they cooled their little butts off.

Make these soon!  You'll only need 10 of the thin mints that I know are shoved in the back of your freezer trying to hide from all other family members.  Only 10.  Do this.  Make these. Eat one and ship the rest off.

Stuffed Thin Mint Chocolate Cookies

Change up your Girl Scout cookie routine and turn those thin mints into a stuffed cookie dream. Watch the surprise on people's faces when they take their first bite!

ingredients:

  • 1/2 cup unsalted butter + additional 2 T, softened
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 t  vanilla extract
  • 1 t  mint extract
  • 1 cup flour
  • 2/3 cup cocoa powder
  • 1/2 t  baking soda
  • 1/2 t  salt
  • 1/2 cup Andes mint pieces + additional for topping
  • 10 Girl Scout thin mint cookies

instructions:

How to cook Stuffed Thin Mint Chocolate Cookies

  1. In a stand mixer cream together the butter and sugars until creamy.
  2. Add in the egg and extracts, stirring to combine.
  3. Sift in the flour, cocoa powder, baking soda and salt, scraping down the sides until combined.
  4. Fold in the Andes crushed mints.
  5. Refrigerate the dough for at least 1 hour.
  6. Preheat the oven to 350 degrees and grease a cookie sheet with non-stick spray.
  7. Using a cookie scoop, put a ball of dough in your hand and press down to make flat. Place a thin mint in the middle. Take another scoop of dough and place on top of the thin mint, pressing the edges together to form a seam around the cookie. Press some additional crushed Andes mints on top and place on the baking sheet.
  8. Bake for 17 minutes or until edges are starting to firm up. Let cool on the baking sheet.
