Well, so far I've made two batches of hard boiled eggs, French toast, mashed potatoes {so good and easy} and now this pasta in my Instant Pot.

I've been converted.

But first, let's chat about what's been going on, shall we?

My bracket is BUSTED.  March Madness has officially made me mad and I have way too many yellow highlights on my bracket.  Who is the University of Maryland Baltimore County anyway?  And goodbye, Virginia.  All hope has been lost.

Secondly, I did some shopping ALONE yesterday and can I just say what a joy that is?  I meandered around and bought random things like socks, books, cute summer tops {super good sales at Old Navy} and drank a Starbucks drink in peace.

It was lovely.

Finally this week ahead is going to make me move at warp speed.  We have about 376 activities going on {dance camp, baseball practice, youth group, school concert, Easter parties, relatives in town, etc.}

Busy weeks like the one ahead is just another reason I am starting to love using my Instant Pot.  I recently had the chance to review Kristy Bernardo's new cookbook, Weeknight Cooking with your Instant Pot and like I imagined, it is exactly what a busy Mom needed.

Simple and quick recipes for busy weeknights.  Done!  This cookbook fits the bill.  I read cookbooks like novels, so naturally I spent one lazy weekend afternoon reading through the entire book and dog-earring the recipes that stood out to me.

I'm fairly certain I triple dog-earred her Instant Pot Alfredo Primavera.  Honestly because #1) it's pasta and my kids love pasta and #2) who doesn't love a good, rich, creamy, garlicky Alfredo type sauce?

I had yet to tackle any type of pasta in my Instant Pot, although my friend Kerri had recommened doing mac-n-cheese many times {I believe her words were "it's life changing"}, but up until I got my hands on this cookbook, I had still yet to try.

But then my eyes landed on this recipe.  I loved that it was filled with chopped sweet peppers and mushrooms {which I happen to love in pasta} and the sauce was simply made of heavy cream and Parmesan cheese.  So simple! 

I did tweek her recipe a bit.  I left out the carrots {just wasn't feeling it}, used some water in place of the chicken stock, used a little less onion and because of convenience used canned mushrooms.  Honestly, you could add any vegetable you enjoy in this pasta, that is the joy of cooking - do what you want!

I was amazed how quickly this came together and how creamy the sauce was made in just a few minutes.  I love, love, love a creamy white sauce on pasta and I was not disappointed.  With just a hint of garlic and tang from the Parmesan it coated the penne perfectly.

I made this one afternoon while my 3 year old napped and the older two were at school.  I remember thinking, "I'll just try a few bites before I snap photos".

Yeah....one plate later....

I just COULD NOT STOP EATING IT.  In the end I made it my lunch {thankfully I hadn't eaten yet} and called it a day.

Instant Pot Alfredo Primavera

This easy, creamy and quick pasta dish will soon been a family favorite! Rich in taste and amped up with some veggies make this a side dish or the main meal.
prep time: 5 MINScook time: 6 MINStotal time: 11 mins

ingredients:

*adapted from Weeknight Cooking with your Instant Pot with Kristy Bernardo
  • 2 t. olive oil
  • 1/2 white onion, finely chopped
  • 8 oz. can of mushrooms, drained
  • 2 cloves garlic, minced
  • 3-4 mini, sweet peppers, chopped
  • 1 lb. penne pasta
  • 4 cups chicken broth
  • 2 cups water
  • 1 1/4  cup heavy whipping cream
  • 1 1/2 cups shredded Parmesan cheese
  • salt/pepper to taste

instructions


  1. Press "saute" on your Instant Pot.  When "hot" appears, add the olive oil and saute the onions and mushrooms until soft.  Add the garlic and saute for another minute.  Press "cancel" and turn off the Instant Pot.
  2. Add in the chopped peppers and dry penne pasta to the pot.  Cover with the water and chicken broth.  Close and lock the lid and press "Manual" and adjut the timer to 6 minutes.  If you are using different pasta, just make sure to set the timer for half of the time.  Make sure the cooking pressure is on "high" and the value is set to "sealing".
  3. When the time is up, open the Instant Pot using the "Quick Pressure Release".  Stir the pasta, then drain in a colander to discard the remaining liquid.  Set aside.
  4. Put the pot back in the Instant Pot and press "Saute".  Pour in the cream, Parmesan and salt and pepper, stirring until the sauce starts to bubble and thicken.  Put the pasta back in the pot and stir to coat with the sauce.  
  5. Season well with more salt and pepper.  Serve hot with additional Parmesan cheese.

  1. I just made a 1 pot meal of chicken and brown rice this morning for the kids and my sitter to eat tonight fir dinner. 1 pot meal straight into the fridge (in the IP liner) after it quick released

  2. LOVE my electric pressure cooker!!! From one pot meals to chicken noodle soup or beef stew from scratch.... I am sooo happy with it and it has been our go to gift for the last two years for family and friends!

  3. Love my instant pot! I definitely plan on using it more once my second baby comes in May. Between a toddler and newborn, I'm going to need all the fast and yummy dinners I can get!
