Oven Baked Tostadas

Mexican food in any form is a good idea to me.
These Oven Baked Tostadas come together quick and a family favorite!

Our dinners last week were a bit hit and miss.  I was prepping and preparing for vacation, which in turn means...buy less groceries for the week and scrape, skimp and throw together ALL THE FOOD in your fridge and try and make something that resembles dinner.

I didn't want a ton of food hanging out having a mold party while we were gone, so I did my best to use up all those food morsels in every stinking meal.

I mean one night we had B.L.T's {delicious} with a side of three day old leftover chicken stir-fry {not so delicious}.  Sometimes you win, sometimes you don't.  At least half of the meal tasted great.

Each year I look forward to this vacation.  I mean, who doesn't look forward to vacation?  We have been blessed to make it an annual event the past 6 years at a beautiful resort on a gorgeous lake.  My full goal each week is to do the following.

1.  Relax.
2.  Relax.
3.  Read many books.
4.  Relax.
5.  Lay on the dock.
6.  Eat delicious food.
7.  Relax.

So yeah, last week I busted around packing, baking, making meals and freezing them {each family makes dinner one night}, doing laundry and spending many eye-breaking hours on a laptop scheduling out blog posts when everyone else was sleeping so I could actually ENJOY my vacation.

After a few days of this craziness I came up with these Oven Baked Tostadas and every single member of the family, including a somewhat picky 4 year old, gave them two thumbs up.  I loved how quick they came together and the kids loved eating with their fingers and me not scolding them for it.

Tostada shells are exactly like hard taco shells yet they come FLAT.  You find them in the same section, but they come in a bag instead of a box.  They require no prep work!

After cooking up the ground beef, you simply start layering.  Tostada, refried beans {don't skimp on those, they are the glue that holds it all together} and cheese.  A simple bake in the oven and then top however you like!

I prefer loading mine up - shredded lettuce, tomatoes, avocado and sour cream.  Bring that up to your mouth and tell me you don't like these!

Oven Baked Tostadas

One of our new favorite easy meals! These Oven Baked Tostadas are family friendly and taste delicious. Plus, they come together quick!
prep time: 15 minscook time: 15 minstotal time: 30 mins

ingredients


  • 6-8 flat corn tostada shells
  • 1 lb ground beef
  • 15 oz can refried beans
  • 2 cups shredded Colby cheese
  • 1/2 cup salsa
  • 1 large tomato, chopped
  • sliced avocado
  • shredded lettuce
  • sour cream

instructions


  1. Preheat the oven to 375 degrees.  Lightly grease a large, rimmed baking sheet with cooking spray.
  2. Cook the ground beef until no longer pink.  Drain off the excess grease and stir in the 1/2 cup of salsa.
  3. To assemble the tostadas, spread a generous amount of refried beans onto the tostada shell, followed by a couple scoops of the taco meat and then sprinkle with the Colby cheese.
  4. Bake for 12-15 minutes or until all the cheese is melted and the tostadas start to crisp up around the edges.
  5. Serve warm, topped with shredded lettuce, tomato, sliced avocado and sour cream.
