Mornings can be HARD

As a mom of three who need out the door for school by 7:45 a.m. I completely understand. Some mornings we eat scrambled eggs and toast and other mornings we are barely scraping by. And I haven't even gotten to the second problem of feeding myself. After they leave I pour a cup of coffee and get to work, often later looking at the clock and realizing it is 9:30 a.m. and I have yet to eat anything.

Unless it's a lazy weekend I'm not a big meal breakfast eater - I need to eat something, but after a couple cups of coffee it's usually something small to tide me over till lunch.

Lately I love a toasted waffle with peanut butter and smashed raspberries, sometimes a bowl of oatmeal, but at times I just need a quick grab and go option that allows me to keep typing and moving.

Enter in these Healthy Breakfast Cookies!

Store bought breakfast cookies or granola bars can be LOADED with added sugars, so I decided to try and make my own.

I'm happy to report these breakfast cookies not only taste great, but they are healthy!

This batch makes 16 cookies and each cookies comes out to 126 calories, 5 grams of fat, 16 carbs, 3 grams of fiber and 4 grams of protein. I've found eating two of these breakfast cookies are just the perfect amount to tide me over until lunch.

That's just a 252 calorie breakfast! Pair that with a handful of fresh berries and it's a well rounded start to your day.

Prep these healthy breakfast cookies on the weekend to jump start your week. If eating alone they will last two weeks {I prefer to keep mine in the freezer - a nice, cold chewy bite!}, but they also stay fresh in an air tight container.

Loaded with bananas, almond flour, chopped walnuts, ground flax seed, cinnamon and raisins they come together quick in the food processor and bake in only 11 minutes.

You can certainly swap the raisins and walnuts for other healthy takes - dried cranberries, chopped pecans, unsweetened coconut - the options are endless.

The perfect grab and go cookie - that is healthy! Some mornings are just too busy for a hot meal. These healthy bites are a loved by adults and kids alike.

Ingredients

  • 2 bananas
  • 2 cups old-fashioned oats
  • 1/4 cup natural peanut butter
  • 1/2 cup almond flour
  • 1/4 cup ground flax seed
  • 1 t cinnamon
  • 1/2 t salt
  • 1/2 cup raisins
  • 1/8 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350 degrees. Lay a piece of parchment paper on a baking sheet.
  2. In a food processor combine the bananas and peanut butter until smooth.
  3. Add in the salt, cinnamon, flax seed and almond flour, again pulsing on LOW to combine.
  4. Lastly add in the oats, raisins and walnuts until it just comes together.
  5. Using a medium-sized cookie scoop, scoop out the cookie mixture onto the baking sheet. Press down on the tops of the cookies (with your fingers or the bottom of a cup) to flatten them out. They will not spread while baking.
  6. Bake for 11 minutes at 350 degrees. Allow them to cool on the baking sheet for 5 minutes before removing to a cooling rack.
  7. To keep fresh, keep covered for up to 5 days. Or put in the freezer to enjoy for up to a month (my favorite way!).

Notes:

Anything can be added to these healthy cookies - dried fruits, other nuts and seeds or dark chocolate, but please know any changes will alter the nutritional value below.
