Peanut Butter Yogurt Pie Bars


It's almost 80 degrees in our house right now and I'm loving it.  With the cold {COLD}, wet spring we've had I'm relishing in this warm day.  I'm keeping my fingers crossed that the husband doesn't look over at me right now and ask to turn on the air conditioning.  He's a wuss when it comes to the heat in the house.

But wait....at the end of the week it's supposed to be colder again and rainy.  Just in time for our garage sale.  Perfect timing.

Anyway.

This dessert.  It is a perfect one to tuck away for those hot summer nights.  It's a no bake, a no fuss and a no-brainer.


And the base is plain Greek yogurt.  So technically it's healthy.  At least that is what I'm telling myself.  And after my third piece, I just continued to say that in my head.  It's healthy, it's healthy....

I added on the chocolate chips for good measure.

It'd be even better with crushed up Reese's peanut butter cups.

But then it wouldn't be healthy.


Peanut Butter Yogurt Pie Bars
32 oz. plain Greek yogurt
3/4 c. peanut butter
1/3 c. powdered sugar
2 c. Rice or Corn chex cereal
3 T. butter
3 T. sugar

For the crust: Crush cereal, add in melted butter and sugar.  Combine and press into an 8x8 baking dish.  Bake at 350 degrees for 10 minutes.  Allow to cool.

For the filling: Combine yogurt, peanut butter and powdered sugar.  Pour into the cooled crust.  Refrigerate for at least 4 hours or overnight.  Top with chocolate chips.


These are my men.  Now that the weather is nice, they'll sit on our front stoop {sometimes with the dog} and just chat.  It's so cute.  I leave them alone for some father/son time.  

The little guy loves it.  I'll often just mute the T.V. and listen to them.  Their conversations are hilarious!  Three year olds are FULL of questions.  Unique questions.  Like, "Daddy why are the tires on your truck so dirty?"  And "Daddy, can I have some cookie dough?"  And the best one tonight, "Daddy, how many people are up in that airplane?"

Oh, and this dessert was supposed to be a "pie" but I didn't feel like "pie" so that is why I called it "Peanut Butter Yogurt Pie Bars".

  1. So one of my favorite desserts is peanut butter pie. The one where you put it in the freezer. Omg. These look like a much healthier alternative!

  3. Love this! Great idea to use Greek yogurt in the base! I am not looking forward to the next couple of days when we are supposed to get snow and more 30 degree weather! Maybe I can eat these bars and pretend it's warm out!
