The simplest of Mexican dinners!

Don't ever say I don't give you easy dinners!

This one is beyond easy.

You see I have a 12 year old boy who is obsessed with taquitos. I think it started a few years back when every once in awhile the school cafeteria had "taquito day" and he came home raving about them. 

Then after a visit to Costco I found the economy size pack {in both beef and chicken varieties}in their freezer section. A simple quick air fry and he was smitten.

Have I ever given you a 3 ingredient dinner?

Let me think.....there was my 2 Ingredient Everything Bagel recipe, my uber popular 3 Step Crock Pot Mashed Potatoes and most recently my 4 Ingredient Pumpkin Streusel Muffins.

But a whole dinner?

I honestly don't think I've ever given you a WHOLE meal that was just 3 ingredients.

3 Ingredient Chicken Taquito Bake

This one was so much fun!

It's not uncommon for me to wake up in the middle of the night or first thing in the morning and be thinking about a recipe. And that is exactly what happened here.

I woke up thinking taquitos, green sauce and queso fresco cheese.

I have no idea why - but I knew I had to throw these 3 ingredients together to see if they tasted as good as I imagined.

3 Ingredient Chicken Taquito Bake

I've always loved the taste of green enchilada sauce. It's not hot or spicy, but it has a nice tang to it. Mix that with crumbly Mexican queso fresco cheese and they go perfect together. Queso fresco cheese looks like and resembles feta cheese, but tastes different - it's super mild and melts amazing. You can find it with all of the other cheeses, often near the Mexican foods section.

If you have leftovers it's also great melted in omelets!

Both of these - the green sauce and the cheese taste amazing over the crispy taquitos. And make sure you get them crispy {you'll read how to make that happen in the directions}.

Feel free to grab beef taquitos at the store if that is what you prefer. We like both! The chicken and cheese variety is just what I happened to have on hand in my freezer.

After taking these out of the oven, I topped ours with shredded lettuce and chopped tomatoes {as they are STILL coming out of my garden}. The kids also grabbed sour cream - because, well they like sour cream on everything!

They ate half the pan one night and a simple reheat in the oven the next night as leftovers tasted just the same - maybe better?

This simple Mexican dish takes some help from store bought ingredients. An easy and flavorful dinner to get on the table quick for your family!

Ingredients

  • 15 Chicken & Cheese Taquitos (22.5 oz box - found in the freezer section)
  • 10 oz can green enchilada sauce
  • 5 oz Queso Fresco Mexican cheese

Instructions

  1. Preheat your oven to 400 degrees and lightly grease a 9x13 baking dish.
  2. Lay the taquitos in a single layer and bake for 5-7 minutes. Remove the pan from the oven and flip over the taquitos.
  3. Pour the green enchilada sauce over the taquitos and crumble the Queso Fresco cheese on top. Place them back in the oven for an additional 5 minutes.
  4. Serve warm with additional toppings if desired - shredded lettuce, tomatoes, sour cream, etc.

Notes:

You can also swap the frozen chicken taquitos for beef ones - whatever your local store has or your family enjoys.

Cast Iron Skillet Peach Cobbler

This simple peach cobbler is virtually a mix & dump kind of dessert!
Make in a cast iron skillet or 8x8 baking dish. Either way it will be devoured.

I am not a traditional food blogger.

Most food bloggers will make and test a recipe many, many times before they share it with their fans. That is not me. My patience is short and quite frankly I just don't have time for all of that. What generally happens instead is that 95% of the time I get it right on the first try and I share it with you the following week.

It's just how I roll!

Saying this, I did make this peach cobbler TWICE.

I was given a GORGEOUS bag of fresh Iowa peaches {yes, Iowa can grow some really fantastic peaches if the weather cooperates} from a friend a couple weeks back. They were still a bit under ripe so I watched and waited another week before diving in.

Oh, and when I did.

Quite possibly some of the best peaches I've ever had.

I got the idea for cobbler in my head, but since I had never baked a peach cobbler before I really just winged it and prayed for a good outcome.

My first attempt was about 85% perfection. I tweaked a few things, baked it up again {this time giving the WHOLE dish to my neighbors} and well, the second time around was perfect.

Oh my goodness, the combination of syrupy warm peaches baked into a crispy batter and then topped with cinnamon and vanilla ice cream?

I do believe this cobbler very well could win some awards.

Now, listen up.

As I know I will get questions. If you do not have a nice, seasoned cast iron skillet to use, do not fret. Grab a simple glass 8x8 baking dish and it works just the same.

I just love cooking and baking with cast iron {plus, it makes for pretty pictures}.

But trust me the taste will be just as spectacular if using a regular baking dish. Heck, you could even bake it in a disposable tin foil pan to take to a friend or neighbor. I can guarantee they'll love it!

See the edges of this dessert?

There is a reason it gets crispy, yet stays soft and buttery. When you look at the recipe you'll notice there is no stirring!

You melt the butter in the pan, you pour the batter over the butter and you lastly pour the syrupy peaches on top. Never stirring or mixing together.

A kid could make this!

This easy mix & dump cobbler uses fresh peaches and has just enough sweetness to make it irresistible!

Ingredients

  • 1/4 cup unsalted butter
  • 1/2 cup flour
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 T baking powder
  • pinch of salt
  • 2 cups fresh peaches, sliced
  • 3/4 cup brown sugar
  • 1 t cinnamon

Instructions

  1. Put the butter In a 10'' cast iron skillet or a glass 8x8 baking dish and heat to melt. If using the cast iron skillet place the skillet on a stove burner on LOW and allow the butter to melt. If using a glass 8x8 dish, melt the butter in the pan in the microwave.
  2. In a saucepan combine the sliced peaches and brown sugar. Bring this mixture to a low boil, continuing to stir until syrupy.
  3. In a mixing bowl combine the flour, white sugar, baking powder, salt and milk. Whisk together and pour over the melted butter. DO NOT STIR the batter into the butter, just pour over it.
  4. When the peaches are ready, pour them over the batter. Again, DO NOT STIR.
  5. Sprinkle the whole dish with cinnamon.
  6. Bake for 40 minutes at 375 degrees.
  7. Serve warm with vanilla ice cream or whipping cream. Refrigerate any leftovers.

Hot Sloppy Joe Dip

This Hot Sloppy Joe Dip is a great tailgating appetizer!
Like a sloppy joe, but as a dip. Great for the whole crowd to enjoy.

We are nearing the "official" start date of Fall.

Do you know what that means? To me it means comfort food. After a Summer of enjoying fresh, cold foods, once the weather starts to change a bit I start to crave warmth.

Bowls of chili, cheesy casseroles, warm, brothy soups. Basically anything that fills up our bellies and leaves us feeling satisfied.

This month the Iowa Beef Council and I wanted to feature the convenience of ground beef. We all have it in our deep freeze and on the ready. How many times in my life have I set a pound of ground beef out to thaw in the morning knowing I'll come up with "something" easy for dinner later?

So many times.

Remember my 25 Ground Beef Dinner Recipes post from last year? That one went over like hot cakes. Sometimes we know how easy ground beef is to use, but we just need help from a blogger {me} to show you the way.

Hot Sloppy Joe Dip

Today we are featuring my new Hot Sloppy Joe Dip!

You guys, this hot dip is INCREDIBLE. After I took photos I just ate the darn stuff for my lunch. Why not, you know? It tastes very similar to a traditional sloppy joe. It's slightly sweet, with hints of red pepper and onion and a tang of mustard and worcestershire sauce to round it out.

Topped with shredded cheddar cheese and broiled to perfection....absolutely, it's just the best.

Hot Sloppy Joe Dip

To mimic a traditional sloppy joe sandwich which is eaten on a soft hamburger bun, I opted to serve this dip with slices of fresh, soft French bread slices. A traditional French baguette works great too! The soft bread soaks up all the juicy dip and creates the perfect bite.

It's saucy and fun and can be eaten right out of the skillet!

I used an oven proof skillet to place this dip right under the broiler {please make sure your skillet is oven safe!}, but if you don't have one you can pour it into any baking dish before placing under the broiler to melt the cheese.

Oh, and if you want to use a slow cooker? That works too. Directions for both are found in the recipe card below.

Your favorite sloppy joe mixture turned into a dip! This fun appetizer is a tailgating must-make. Your guests will love this hot dip.

Ingredients

  • 1 lb ground beef
  • 1 red pepper, finely diced
  • 1/2 white onion, finely diced
  • 2 cloves garlic, minced
  • 1 1/2 T flour
  • 2 T brown sugar
  • 1 cup beef broth
  • 1/2 cup ketchup
  • 1/3 cup yellow mustard
  • 1 T worcestershire sauce
  • 1 t salt
  • 1 t pepper
  • pinch of cayenne pepper
  • 1 1/2 cups cheddar cheese, shredded

Instructions

  1. In an oven proof skillet saute the diced red pepper and onion until translucent or just soft.
  2. Add in the ground beef and start breaking it apart, mixing it together with the sauteed peppers and onions.
  3. Continue cooking the ground beef. Add in the garlic, brown sugar, salt, pepper, cayenne and flour. Stir together until combined.
  4. Add in the beef broth, ketchup, mustard and worcestershire sauce. Bring the mixture up to a rolling simmer and allow to thicken. Continue stirring off and one for about 10 minutes until thick.
  5. Stir in 1/2 of the shredded cheddar cheese. to melt. Set the oven to broil and top the sloppy joe mixture with the remaining cheese.
  6. Place the skillet (make sure it's oven proof) under the broiler for just a few minutes until golden brown and melted. Do not step away - it goes quickly!
  7. Remove from the oven and eat with sliced fresh bread (baguettes work great).

Notes:

This dip can also be made in the slow cooker. You will add the cooked sloppy joe mixture to a slow cooker and top with the cheddar cheese and set to warm. Once the cheese has melted it's ready. You won't get the crunchy cheese from the broiler, but it's still just as good!


Leftovers can also be reheated and eaten on hamburger buns as sandwiches.

Cake Mix Pumpkin Streusel Muffins

It's pumpkin spice season!

I know, I have a lot of you that dislike it or think it's overplayed or do not want to hear about it until November 1st. 

Sorry, I'm just not one of those people.

I love the flavor of pumpkin spice in my coffee, in cream cheese on my bagel, in sweet breakfast casseroles, in the smell of candles on a chilly Fall day.....and in my muffins! I loved it all long before it became a fad.

Way, way back in the day - well before kids and quite possibly well before I was married I remember making a muffin with a chocolate cake mix and a can of pumpkin. At the time there were some gals where I worked always bringing treats into work on Fridays and we were always trying to "one up" each other with unique baked goods.

I thought I was pretty clever with these!

The one I made, made a delicious chocolate muffin {I remember also adding chocolate chips} without having to use oil and eggs like most cake mixes suggest. Who knew a can of pumpkin could replace those and turn a cake into a muffin?

You all love my cake mix cookies, so when a reader asked for that recipe last week, I got to remembering these muffins. And since it's now very close to Fall, my mind turned to pumpkin. Why not make a tasty pumpkin spice version?

So out to buy a cake mix I went and Ingot to work.

And guess what? It worked!

Brilliantly I might add. These muffins are so easy and so tender and have just the right amount of pumpkin spice.

I didn't want these muffins to be "too boring" so I added a crumbly streusel as well. The perfect topping. It gives them a slight crunch and sweetness that they normally wouldn't have.

And because people will ask - you can leave the streusel topping off! A few calories will be saved.

It will not hurt my feelings at all - but I do recommend trying them with it. It gives them a bakery style feeling and taste. Throw on a slab of soft butter and your breakfast is MADE.

These muffins are fluffy and tender and I just cannot wait for people to see them. How can anyone find any easier muffin?

Cake mix + can of pumpkin + seasonings.

I served these alongside my Amish Breakfast Casserole for dinner and the kids dip back flips {not really, but if they could they probably would have}, and immediately asked me to bake them up again soon.

A simple & easy pumpkin muffin recipe - with over the top flavor! With a yellow cake mix as the base, just a few extra ingredients make these some of the best pumpkin muffins you'll ever have.

Ingredients

For the Muffins
  • 1 15 oz box yellow cake mix
  • 15 oz can pumpkin
  • 1 t pumpkin pie spice
  • 1 t cinnamon
For the Streusel Topping
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/2 t pumpkin pie spice
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat the oven to 350 degrees and spray a 12 cup muffin tin with cooking spray and set aside.
  2. In a bowl combine the cake mix, canned pumpkin and spices. It will form a thick batter.
  3. In another bowl combine the streusel ingredients - flour, brown sugar, pumpkin pie spice and cold cubed butter. Using a fork blend it all together until it resembles coarse crumbs.
  4. Fill each muffin tin with the batter, then generously top each muffin with streusel topping.
  5. Bake the muffins for 20 minutes or until slightly golden.

Notes:

The streusel topping is optional if you'd like a "healthier" muffin.
