We made it back from our Florida vacation {only to have another one looming on the horizon}, but nonetheless I'm back and I picked my first tomatoes from my garden!

I felt like they took forever this Summer to turn red. Saying this I'm still waiting on my big boys to ripen. When they do I'll be inundated. I'll be up to my ears in the darn things. Until then we are enjoying these juicy red cherry tomatoes.

My 10 year old helped me pick the other night {of all the kids, she loves them the most}. I literally laid on the ground and threw them out to her. It was a jungle in there.

I wanted to create something fresh with these beauties, initially thinking about my classic bruschetta or my creamy, cheesy cherry tomato dip - but in the end settled on marinating them.

Because I'm a food blogger and of course always need to create something new, right?

Imagine living with me.

This appetizer is so simple! And fresh. Not to mention flavorful. If you love a great tomato with a tangy, zesty dressing, this dish is for you.

Marinated Garden Tomatoes with Fresh Mozzarella

These marinated tomatoes are a great dish to bring to a Summer party. They only need 2-3 hours in the fridge to get all those flavors married together - BUT - if they go longer it's no problem! The tomatoes only get more flavorful.

Then when getting ready to serve, toss in chunks of fresh mozzarella - because fresh cheese pairs perfectly with garden produce. It's like a great salad without any lettuce.

And let's not forget the bread!

The day before I made this recipe my son and I went to the store {in a different town mind you} for the ingredients. Upon arriving home, I realized the beloved baguette I just had purchased {again, in a town 10 miles away} was not in my van.

My beloved son, whom is clearly in that "my head isn't connected to my body" stage of life, had left it in the shopping cart while loading up the van.

Hmmmpfh.

I promptly texted a photo to the husband {of the said baguette} so he'd know what I was talking about, asking him to pick another one up on the way home.

He said, "please remind me again before I leave".

I forgot to remind him.

He forgot the baguette.

Hmmmpfh.

So in an effort to TEACH THE SON A LESSON, they loaded back up once home and drove back to that store {again, 10 miles away} and bought another baguette.

You see, this recipe almost never came to fruition. I had to have the baguette, because it is absolutely just delicious sliced and toasted and topped with these marinated tomatoes. Absolutely stinking delicious. I'm sure you'll find that out.

Marinated Garden Tomatoes with Fresh Mozzarella

Fresh garden tomatoes are marinated in oil, balsamic vinegar, honey and fresh herbs. Tossed with fresh mozzarella and eaten on a toasted baguette....it will be your favorite Summer appetizer!

Ingredients

  • 18 cherry tomatoes, halved
  • 1/3 cup olive oil
  • 2 T balsamic vinegar
  • 1 T honey
  • 1 clove garlic, minced
  • 1 T dried minced onion
  • 1 t dried parsley
  • 3 T fresh basil, chopped
  • 1 t salt
  • 1 t pepper
  • 1 small log fresh mozzarella, cut into cubes
  • 1 whole baguette, sliced & toasted

Instructions

  1. Slice the cherry tomatoes in half and place into a bowl.
  2. In a mason jar combine the dressing ingredients - olive oil, vinegar, honey, spices and herbs. Put the lid on the jar and shake to combine.
  3. Pour the marinade over the tomatoes and toss. Keep in the fridge for 2-3 hours.
  4. Before serving stir the tomatoes and add in the cubed fresh mozzarella.
  5. Slice the baguette and toast in the oven for a few minutes a side just until golden. Serve the toasted baguette slices with the marinated tomatoes.

New Dine-In Breakfast Features at Hy-Vee

As many of you know, my husband and I have three kiddos – three busy, active kids. Between their sports schedules, camps, friends and various comings and goings we are on the run a lot as a family. In the Summer when they aren’t in school I try my best to carve out some individual time with each of them.

These outings are often very simple – nothing major, just little “dates” to make them feel special and to have more one-on-one time with each of them. Often this means a meal out at a restaurant!

Because what kid doesn’t love to eat, right?

Recently, I took our girls (ages 10 and 7) out for breakfast at Hy-Vee. It’s a double win, as we filled up our bellies with a delicious morning treat and then grabbed some groceries before heading home.

Hy-Vee’s new breakfast options are available now! As they say, “it’s a real eye opener”. Everything is made to order and uses only fresh, high-quality ingredients. The girls and I got a chance to see their new breakfast menus and let me tell you, picking an option was hard to choose.

But, first…….ALWAYS COFFEE. Which was piping hot and refilled on the ready.

In the end the three of us decided to choose three different dishes so we could all share a bit of each other’s – hey, it’s what families do!

I went the more savory route, with a cheesy ham and sausage omelet (that was huge!) and a side of roasted, pan fried potatoes. Both were salty and filling and tasted amazing.

The girls (being kids, naturally) went the more sweet route and chose a homemade cinnamon roll with fluffy cream cheese frosting, mixed fruit and a thick Belgian waffle covered in Nutella and sliced bananas.

They claimed both over-the-top and fabulous!

This breakfast date was fun!

Hy-Vee outdoes themselves when it comes to breakfast. Anything you want or are craving is available – even craft cocktails! 

Pancakes, breakfast sandwiches, omelets, hot cocoa (the girls loved it), waffles, mixed skillets, combo platters, coffee and so much more.

We are right in the thick of it at our house - softball has ended, baseball is on it's last leg and our vacations are upon us! We leave for Florida in a few days and we still have our annual Summer lake trip to Okoboji to look forward to in mid-August.

Lots of Summering left for us.

You know what else Summer is about? Fun desserts that require NO oven.

No Bake Peanut Butter Cup Pie

That is why I love this pie!

There is no heating up your kitchen in the warm weather, yet you still get to eat PIE. This one could not be more simple - just 6 ingredients {heck, one is just vanilla extract} so there is no need to make a huge list for the grocery store.

And this pie involves peanut butter AND chocolate. I'm of the notion that peanut butter and chocolate pair well together {I do not understand those that don't like it} so if you're with me, then you'll love this sweet dessert.

No bake pies are fun because they more often than not involve cream cheese, sugar and whipped topping {in this case I went the store bought Cool Whip route for ease}. Those three foods make for creamy pies!

The addition of peanut butter only enhances the creaminess.

And of course I chopped up Reese's Peanut Butter Cups for good measure and folded them into the pie filling as well. Why not, right?

With the kids home during the Summer, I'm often photographing my dishes while they are around and for the most part they stay out of my hair.

BUT NOT WHEN IT INVOLVES PIE.

I had kids hovering in my light the whole time and as soon as I was done they were fighting over this slice that I cut for the photos. They tore into it with three forks and devoured it lightning quick. They already had a hard time waiting the 4 hours in the fridge for it to firm up, so I gave in.

I chalked it up to a lesson in patience.

No Bake Peanut Butter Cup Pie

This creamy peanut butter pie is easy, a crowd pleaser and even loaded with peanut butter cups in each bite!

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 cup creamy peanut butter
  • 1 T vanilla extract
  • 1 cup peanut butter cups, chopped
  • 8 oz. Cool Whip, thawed
  • 1 graham cracker pie crust, store bought

Instructions

  1. In a stand mixer cream together the cream cheese and sugar until fluffy.
  2. Add in the vanilla extract and peanut butter and combine until smooth.
  3. Fold in the chopped peanut butter cups.
  4. Then very gently, fold in the Cool Whip topping until fully incorporated.
  5. Pour the pie filling into the graham cracker crust, spreading to the edges and smoothing out the top.
  6. Refrigerate for 4 hours before serving.

Sour Cream Zucchini Muffins

I'm going to brag for a moment.

I've perfected the perfect muffin. Remember my super popular Triple Berry Sour Cream Muffins from awhile back? People jump fences for those and I have no doubt they will for these two.

Plus, zucchini is a vegetable, so I'm winning lots of points here.

Summer is all about fresh veggies and if you have ever planted zucchini then you are well aware that when they take off, they TAKE OFF.

Prepare yourself zucchini novice, you'll have a ton of it and here in the Midwest we like to call it "drop it on your neighbor's doorstep and run" season. Sometimes you just have to give it away you have so much! 

For people like me, who don't grow zucchini {I just don't have the room, it spreads} I absolutely love when I find a bag at my front door.

Over the years I've made some fun zucchini dishes. Check these out.


Sour Cream Zucchini Muffins

The richness of sour cream in this muffin batter makes them rise beautifully. You fill them super full and they come out pretty!

And like any zucchini dessert, these muffins are studded with spices like cinnamon, nutmeg, brown sugar and more. I even throw in a dash of almond extract because I love the flavor and it makes people go, "hmm, what's that"?

This recipe makes a dozen BIG bakery style muffins {don't forget to sprinkle them with white sugar before baking - it makes a fun, crunchy top}. They will not last long. Often when I make a batch for breakfast, by day 2 there are none in sight.

Sour Cream Zucchini Muffins

Sour Cream Zucchini Muffins

Shred up all that zucchini and bake up these muffins! Bakery style and loaded with flavor - they will become your favorite recipe for using up zucchini.

Ingredients

  • 3/4 cup brown sugar
  • 3/4 cup white sugar + add'l for sprinkling
  • 1 1/2 t cinnamon
  • 1/4 t nutmeg
  • 2 cups flour
  • 1/2 t baking soda
  • 2 eggs
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 1 T vanilla extract
  • 1 t almond extract
  • 1 1/2 cup zucchini, shredded & drained

Instructions

  1. Preheat the oven to 400 degrees and lightly spray a 12-cup muffin pan with cooking spray.
  2. In a large bowl combine all of the dry ingredients and mix together.
  3. In a small bowl whisk the eggs, sour cream, oil and extracts and set aside.
  4. Wash and dry two small zucchinis. Cut off the ends and shred on a grater into a bowl. Place the shredded zucchini in a clean towel and press/twist to squeeze out all of the water.
  5. Add the wet mixture to the dry ingredients and gently combine. Then fold in the drained zucchini until just combined.
  6. Using a spoon or cookie scoop fill the muffin cups generously (they will seem REALLY full and that's okay). Sprinkle the top of each muffin with sugar.
  7. Bake for 20 minutes or until lightly golden brown. Allow to cool for 5 minutes before eating.

In the middle of Summer we here in the States celebrate the 4th of July - American's birthday! More often than not we are sweltering outside at picnics or beaches, so naturally we make sure FOOD is the highlight so we can take our mind off the sweat and heat.
