Marinated Garden Tomatoes with Fresh Mozzarella

Nothing beats a fresh tomato from the garden in the middle of Summer.

These Marinated Garden Tomatoes with Fresh Mozzarella are the perfect appetizer!

We made it back from our Florida vacation {only to have another one looming on the horizon}, but nonetheless I'm back and I picked my first tomatoes from my garden!

I felt like they took forever this Summer to turn red. Saying this I'm still waiting on my big boys to ripen. When they do I'll be inundated. I'll be up to my ears in the darn things. Until then we are enjoying these juicy red cherry tomatoes.

My 10 year old helped me pick the other night {of all the kids, she loves them the most}. I literally laid on the ground and threw them out to her. It was a jungle in there.

I wanted to create something fresh with these beauties, initially thinking about my classic bruschetta or my creamy, cheesy cherry tomato dip - but in the end settled on marinating them.

Because I'm a food blogger and of course always need to create something new, right?

This appetizer is so simple! And fresh. Not to mention flavorful. If you love a great tomato with a tangy, zesty dressing, this dish is for you.

These marinated tomatoes are a great dish to bring to a Summer party. They only need 2-3 hours in the fridge to get all those flavors married together - BUT - if they go longer it's no problem! The tomatoes only get more flavorful.

Then when getting ready to serve, toss in chunks of fresh mozzarella - because fresh cheese pairs perfectly with garden produce. It's like a great salad without any lettuce.

And let's not forget the bread!

The day before I made this recipe my son and I went to the store {in a different town mind you} for the ingredients. Upon arriving home, I realized the beloved baguette I just had purchased {again, in a town 10 miles away} was not in my van.

My beloved son, whom is clearly in that "my head isn't connected to my body" stage of life, had left it in the shopping cart while loading up the van.

Hmmmpfh.

I promptly texted a photo to the husband {of the said baguette} so he'd know what I was talking about, asking him to pick another one up on the way home.

He said, "please remind me again before I leave".

I forgot to remind him.

He forgot the baguette.

Hmmmpfh.

So in an effort to TEACH THE SON A LESSON, they loaded back up once home and drove back to that store {again, 10 miles away} and bought another baguette.

You see, this recipe almost never came to fruition. I had to have the baguette, because it is absolutely just delicious sliced and toasted and topped with these marinated tomatoes. Absolutely stinking delicious. I'm sure you'll find that out.

Go pick some tomatoes. Stop at that farmer's market and buy some. Steal them from a neighbor. Make this as an appetizer or a meal. No judgements here!
