B.L.T. Guacamole

I made this guacamole tonight and thank god I ate some for supper tonight, as the husband will be coming home soon from work and the bowl in the sink will just be a faint reminder of what it once was.


He loves this stuff.  I'm sure it will be his supper too.  Why don't I make this more often?  I really need to get better at making more of the stuff we LOVE more often.  I'll work on that.

This guacamole isn't traditional.  It has bacon.  And leeks.  My version of a B.L.T.  One of the other things I love in the summer.  {And on that note - the next time you have a B.L.T. you need to add guacamole to it.  It takes it to a whole 'nother level.  Just saying.}

Anyway, I added bacon and thought to myself, I'll call it B.L.T. Guacamole, right?  Yeah, well I didn't really feel like putting lettuce in it for the "L".  That was very unappealing.  But leeks?  I can do leeks.  They have a mild onion flavor.  So I picked one small bunch from the store and threw them in.


B.L.T. Guacamole
2 ripe avocados
1/4 c. plain Greek yogurt or sour cream
1 t. garlic powder
juice of 1/2 of lime or lemon
1 medium sized tomato, chopped
1 small leek, finely chopped
1 strip of bacon, cooked and chopped

In a food processor combine avocados, yogurt/sour cream, garlic powder, lime/lemon juice, half of the chopped tomato and leek and process until smooth {I like my guacamole smooth, but you can leave chunky}.  Remove from the food processor and fold in the remaining chopped tomato and bacon.  Serve with chopped veggies, pita chips or tortilla chips.

Or slather on a B.L.T. sandwich!

Okay, enough of my guacamole rampage.

I've had some people comment that I need to show more pics of me, the family, our kids, our life, etc.  Okay!  I'm listening.  In an attempt to show you more of my "life", I added a couple for you today.

When we go to my parent's house the kids love, love, love to sit at the kitchen counter and help Grandma cook and bake.  Here the Little Miss is helping with baked beans.  I'm sure her fingers were all over it and more than likely she probably sneezed it in too, but we ate it anyway.

Then when I was under the weather my mom, dad and grandma took the kids to see my cousin's baby lambs.  He has like 30+ of them.  I wished I could have gone with them, but I was barely moving off the couch that day, so I gave orders to mom to take photos.

On the farm they have chickens, horses, cows, dogs and tons and tons of baby lambs.  My kids were in heaven.

We've got to get them to the zoo this summer.  It will be a blast.  I might even have more fun then them.

I wonder if lambs like guacamole?

    For sure! I often do. The sour cream/yogurt just give the guac a bit more of a creamier texture.
