20-Minute Korean Beef

From start to finish this dish is a star. 
It comes together in 20 minutes and your family will be asking for seconds.

We've had a pretty good week so far.  The husband started his new position which makes for a happy wife.  We've had two play dates.  We've stuck to our meal plan which makes my uber-organized self feel like I've accomplished something major.  I've been sticking to my early morning walks with the dog.  And the weather has been fantastic.

A great week, don't you think?

Last week was a bit of a whirlwind.  We had a family visitation and funeral out of town and although we saw a ton of great family members that we love dearly, it is never fun under those circumstances.

So this week, I'm thankful to be back on track.

Last night we had this incredible Korean beef dish.  I know, it may look like a heap of meat and broccoli just laying on top of plain rice, but please TRUST me when I say, it isn't.

I timed myself.  I started this at 5:45 and it was finished by 6:07.  Yeah, yeah, technically two minutes over my 20-Minute title, but who wants to make 22-Minute Korean Beef?  I did technically fail a dumb math class in college, but I'm pretty sure 22 is rounded down to 20.

After cooking the ground beef you pour in this delicious sauce and let it simmer.  It's beyond flavorful.  I added broccoli...you know...for greenery.

The only problem with this dish?  We gobbled it up in less time than it took to make. Everyone loved it.  The next time it gets put on our meal rotation I'm doubling it.  Heck, maybe even tripling it?  Go big or go home.

I'm seriously sad there are NO leftovers.

It would probably taste like heaven even cold.  Straight out of the fridge.  A bit obsessed, am I?

So, if you've learned anything from this post, know that you need to double the batch below and hide all leftovers from your husband.

Here you go.

20-Minute Korean Beef

1 lb. ground beef
2 c. broccoli florets
1/3 c. brown sugar
1/4 c. soy sauce
1 T. rice wine vinegar
1/2 t. crushed red pepper flakes
1/4 t. dried ginger
1 T. olive oil
3 cloves of garlic, minced
cooked rice, for serving

1.  In a skillet cook the ground beef over medium-high heat.  Once no longer pink, drain off excess grease.
2.  In a bowl combine the brown sugar, soy sauce, vinegar, olive oil, garlic and seasonings.  Pour over the meat, bringing to a full simmer for a few minutes.
3.  Right before serving toss in the broccoli to heat through.
4.  Serve hot beef mixture over rice.
