Angel Food Strawberry Fluff

This is the dessert you'll be bringing to all the summer gatherings.
Light, fluffy and bursting with juicy strawberries!

This is officially the coldest Spring we've had around here in the past few years.  We just cannot get above the 50 degree mark!  And the wind.  He and I are not the best of friends right now.  Most days I feel like the littles and I will tumble over and blow away just walking from the house to the garage.

All I want are these things.

1.  Warm enough weather to sit on my deck, read a book and not get chilled {i.e. have to bring a blanket with me}.

2.  To walk out the door without the commotion of coats, hats, boots and tears.

3.  The longing for days filled with park play dates, picnics and letting the kids be outside most of the afternoon.

Too much to ask?

I don't think so.

In an effort to force Spring into my life last weekend I made this "salad".  Ha.  I call it a salad, but really it resembles nothing in that form.  Do you see any greenery?  Yeah, me neither.

But it is the best damn salad around.  Tell yourself that, then maybe you won't feel bad about eating two bowls full.

I first had a version of this salad dessert a couple of years back while knee deep in our annual garage sale extravaganza.  Which by the way, is coming up again in a month.

My peeps.  This is my annual chance to get rid of all the crap in my house.  If you know me, you know our house is small and that I don't have much clutter, but trust me, I always finds ways to get rid of more.  I'm just not much of a material girl, especially when there isn't space for it to spread out.  

I am notorious for stepping on a toy, looking at it, bending down, picking it up and promptly walking it over to the garbage.

Anyway, my girls and I get together the first weekend of each May and sell EVERYTHING. People go nuts for kid's stuff and guess what?  Between the three of us, we have nine of them.  Kids that is. Needless to say, we live for this opportunity each Spring.

With this annual tradition comes food.  Remember this dessert I was talking about?  I first ate it here. My friend's mother-in-law came walking up the driveway with a big bowl of deliciousness.  I remember her serving us each a bowl and we died.  Right there with customers waiting in line.  I may have even offered one of them a bite.

This stuff is ideal for a large gathering {it makes a hefty amount}, but feel free to make it for yourself and die in an Angel Food Strawberry Fluff coma.

Angel Food Strawberry Fluff

1 lb. strawberries, cut into chunks
3.4 oz. instant vanilla pudding
2 c. cold milk
1 angel food cake, cut into chunks
16 oz. whipped topping
7 oz. sweetened condensed milk

1.  In a large bowl whisk together the dry pudding mix and the cold milk until combined and thickened.  Usually takes 3-4 minutes of continuous whisking.
2.  Add the chopped strawberries and angel food cake to the pudding, folding together.
3.  Drizzle the condensed milk over this mixture and lastly fold in the whipped topping.
4.  Eat immediately or refrigerate until ready to serve.  Usually best eaten within the first 24 hours.
