Chocolate Chip Pecan Skillet Cookie for Two

A good dessert is my saving grace.  Is it for you?  As I've said before I try and save those calorie-laden dishes for the weekends or special nights out.  I just can't eat this stuff all day everyday.  My body would morph into a giant human sized blueberry.

Now, here's the kicker.  I say this, but then I sometimes bend the rules too.  I was reading an email newsletter from Jen Hatmaker recently {the famed Christian blogger, speaker, author} and she was talking about having "that kid".  Stay with me here.

Come on.  We all have "that kid".  This is the kid who tests us daily {sometimes hourly}. This kid is the reoccuring character in all our eye-rolling stories.  When someone starts in about "that kid" I die just a little inside, scared for my life what they'll tell me they did now.

I have "that kid", who shall remain nameless.  I've had the same conversation with them seventy billion times about his or her behavior, so much now that I've now boiled this conversation down to one long, exaggerated exhale of OH MY GOSH, JUST BEHAAAAAAAVE.

It was on one of those days of OH MY GOSH, JUST BEHAAAAAVE that I invented this skillet cookie for two.

It's wasn't date night.

Nor the weekend.

But rather a random Monday morning when I finally got "that kid" shipped off to school after too many squabbles to count.

I wanted to put some Kahula in my cappuccino but considering it was 8:00 a.m.{don't put it past me}, I opted for chocolate, pecans and ice cream instead.  The breakfast of champions.

Oh my gosh you guys.  You know the chocolate chip cookies that are a tad crispy on the outside and warm and goey on the inside?

This skillet cookie is that in giant form.  I wanted to run out the door and share with passergoers but figured I'd soon become "that mom" in town that offers baked goods on the side of the street in her bathrobe, reeking of spiked coffee.

The next time you are staying in with your sweetheart make this.  It is the perfect dessert for two! Too bad I'm about two months late on sweetheart lover's day, but that doesn't mean we still can't celebrate. You'll need a nice 8 inch cast iron skillet or stainless steel skillet like mine.  One that is oven proof. Do not put a non-stick pan in the oven!

After just 20 minutes of baking you'll have a delicious, warm cookie pie.  Let it rest for at least 5 minutes to set up a bit, it will be HOT!  Then get out my 2nd guilty pleasure {ice cream!} out of the freezer and place a hefty dollup of that vanilla goodness right in the middle.

Let it melt a little....

This is when it gets good.

Grab two spoons and stuff your face.

If you have leftovers {bless}, you can cover with foil and keep on the counter for a day or two, or stick it in the fridge.  This is also a fun one to make for the kids, set on the middle of the table and have everyone grab a spoon.  No dirty dishes!

Chocolate Chip Pecan Skillet Cookie for Two


1/2 c. flour
1/4 t. baking soda
1/4 t. salt
1/4 c. sugar
1/4 c. brown sugar
1 t. vanilla
1/4 c. unsalted butter, melted
1 egg
1 c. chopped pecans
1 c. mini chocolate chips

1.  Preheat the oven to 350 degrees.  Grease a 8 inch cast iron or oven proof skillet.
2.  In a bowl combine the melted butter, egg, vanilla and sugars.
3.  Sift in the flour, baking soda and salt until just combined.  Stir in half of the pecans and chocolate chips.
4.  Press the dough into the greased skillet and sprinkle the remaining pecans and chocolate chips over top.
5.  Bake for 18-20 minutes or until golden brown and the edges are puffy and the center looks set. Let cool for at least 5 minutes.
6.  Top with vanilla ice cream and dig in!
