Garlic & Thyme Butter Steaks

Juicy, buttery steaks are on the menu!
A simple butter sauce infused with garlic and thyme will delight any man in your life.

Father's Day is just over a week away and wowza do I have the recipe you need to make the man in your life! A simple, great steak is hard to beat {at least according to my husband} so that is exactly what I did this past weekend.

We recently picked up a half of a beef {the Iowa way of saying - literally half of a cow from the meat locker} and let me tell you what....our freezers are FULL.  When the husband started carrying in the boxes and boxes of meat I promptly told him we better call a friend to see if they had extra room for us.

But, after a thrilling game of freezer tetris, it all fit!

As a family of five {with three hungry, growing kids} having a freezer full of beef is a godsend. We stocked up on ground beef, roasts and of course, steak!

Now that it's basically Summer, our family is grilling a LOT.  The husband loves, loves, loves to put meat on our smoker/grill and frankly I often enjoy whipping up the side dishes so he can take care of the main dish.

But this time - I came up with the main dish!  Steak.  A juicy, buttery, garlic and thyme infused ribeye steak.  It's hard to come up with the words to describe these ribeyes, but I'll try.

Glorious.

Divine.

Heavenly.

Blissful.

Any cut of steak will work in this recipe, I just happen to love ribeyes.  Sirloin and T-bones are a good choice too.

As for cooking steak - don't be intimidated.  You can do this! There are so many factors to consider, but once you figure out how you like it {doneness, grill marks, marinades, etc.} it really is easy peasy.  Here are some great links to read on further.

Golly look at that sizzle!

Honestly, I could have stared at that butter sauce come together all day, but I had a drooling husband waiting behind me.

After you cook your steaks to your desired perfection you let them take a bath in butter, garlic and thyme {someone should make this a candle scent}.  The steaks soak in all that greatness!  Thyme is an evergreen herb and a cousin to oregano.  It has a woody stem and many describe it as sweet, lemony and a bit peppery.

It's delicious.

These steaks are ideal to grill up for any Dad in your life, but don't stop there - if cooking for a bigger crowd go ahead and double or triple the sauce and drizzle a platter of ribeyes with it.  No one will be disappointed.

I served these steaks with roasted potatoes and a big Caesar salad and life was basically perfect in that moment. This is one of those meals that you'll remember for a long time.

And to think - just three ingredients to a killer sauce?

You know me, I'm not a complicated cook. I want things to be simple, yet delicious - and that my friends, was accomplished.

Garlic & Thyme Butter Steaks

A rich, buttery sauce infused with garlic and thyme gives these beef steaks incredible flavor! Perfect to grill up for your man to make his day special.

Ingredients:

  • 4 ribeye steaks (sirloin, T-bone, etc work fine too)
  • 1/2 stick unsalted butter
  • 5 cloves garlic, whole and peeled
  • 6-7 sprigs thyme
  • salt
  • pepper

Instructions:

  1. Lay out your steaks and bring them to room temperature.
  2. Pat each steak dry with paper towels and liberally season both sides with salt and pepper.  Set aside.
  3. Start your grill, allowing it to come to medium-high heat.
  4. Grill your steaks just 5 minutes a side for a medium cook (less or more depending on your desired doneness). Remove the steaks from the grill, cover with foil and allow to rest.
  5. With the grill still hot, place a cast iron skillet directly on the rack (or any stainless steel skillet that can handle high heat) and lay in the butter, garlic cloves and sprigs of thyme.  Gently stir until the butter is melted and sizzling.
  6. Taking two steaks at a time, place them into the hot melted butter mixture.  Gently flip the steaks and spoon over the garlic butter thyme sauce, letting the steaks soak it in.  Remove the steaks from the skillet and do this with the remaining two steaks.
  7. Serve the steaks immediately, pouring on any additional leftover sauce.

Notes:

Any cut of steak will do in this recipe - we love a good ribeye, but sirloins and T-bones work great too. We prefer an easy 1-inch thick cut steak as it cooks fairly quick, but again whatever you have on hand will work, just note cooking times may vary. If you do not have a grill a cast iron skillet or stainless steel skillet on your stovetop works well too.
