What's Going On With....Me.

I'll be showcasing this dish later this week - Chicken Pesto Penne.  A recipe I first saw on Been There, Baked That.  I changed it just a bit, but let me tell you, as I was mixing this up, standing in the kitchen Saturday I just wanted to dive right in.

It smelled amazing, looked amazing - now I'm wondering why I didn't steal a bite.

We got home this evening from a long weekend in Minneapolis visiting my sister and her family.  It was nice, relaxing and fun.  I've said it before, going to their house is like being on a lake without the "lake".  They built a beautiful home and in my dreams I live there too.

If you saw my Facebook post on Saturday you saw her kitchen.  Its like cooking on the Food Network. Love it!

My sister had asked me to prep and prepare a ton of freezer meals for her and her family and I took her up on the offer.  They lead a crazy life, with crazy schedules, so I hope what I did on Saturday helps them this summer.

I also had a package waiting for me when we got home today.  Anyone out there read or subscribe to Taste of Home magazine?

For the past few years I have been a Field Editor for this magazine.  It allows me to submit recipes for publication, take part in their stories, questionnaires, surveys, etc.  Recently, all of us had to re-apply for this position and I'm happy to say I was picked again!

So this fun package came and I can't wait to dig in {when I get a moment}.

For the breezeway I don't have.

Someday, I will have a house that breathes of fresh air and Better Homes and Gardens magazine.  For now, I've realized that, that day will not come until kids no longer live in our house.

They destroy everything.

Did you guys see the four brand-new recipes I featured last week?

All four are equally delicious {I could be a little biased}, but seriously, at least try one of them.  Easy peasy and palate pleasing.

Look at this party shed!  I want it.  NOW.  Too bad the whole shed would take up half our yard!

It would be perfect for storing yard items, entertaining.....and just looking darn cute.  Don't-cha-think?  On that note, I planted most of our garden last week.  So far, just tomatoes and peppers, but it's coming along.  Now, I just need to remember I put it out there and to water it.  My mind isn't quite into summer mode yet.

And I checked the strawberry farm I go to each year to see when they would FINALLY be ready and they are hoping by the end of this week.

I need to make jam.  Stat.

I'm pretty sure I'm not going to make the Top 25 Top Foodie Moms.....just not enough votes.....but if you get a spare moment between now and tomorrow {that is when voting ends}, I'd sure appreciate that last vote!

  1. I want the party shed too!!! Everything I make is homemade. Seriously, I've made it all. Graham crackers, salsa, goldfish crackers, tomato soup... :)

  2. Strawberries are coming up here in Ohio! We went to the market on Saturday and they are SO RED, and gorgeous. I should make jam too....should, but won't. I make one things from scratch, my granola. Also ice cream, BUT the base ingredients aren't from scratch, I cheat a bit.

    Can't wait to see your version of the pesto chicken, I think I want to "real food" it up next time, maybe eliminate the jarred alfredo sauce. Speaking of strawberries, I had a crazy dream last night. I was fighting with someone over the last organic strawberries at the store lol. Goofy foodie dreams :)

    I make a lot of things completely from scratch ... bread, buns, pie dough, perogies, soups, cookies, etc. etc.. Pretty much everything! I've made a lot of condiments too, including ketchup, mustard, etc..

  5. Um, why the hell did I not like you on Facebook yet - just did now! :D Holy cow, your sisters kitchen is a dream. My husband and I can't even be in the kitchen cooking together at the same time its so tiny. Some day! That was so nice of you to help her out.

    Well you know I make bread and salsa, but my favorite again is stove top "refried" beans - for pennies to make, its so good and no added lard! I made some over the weekend again and have some for my lunch today. :D

    Sometimes this is scary....we are thinking alike again....I literally just got back from the grocery store with two bags of pinto beans to try out some homemade refried beans! I am going to try them in the slow cooker.
