Beef & Bean Baked Tacos

Any dinner that has easy clean up written all over it...is a dinner I want to make!
These tacos are simple, family friendly and tasty.

I will fully admit I'm a morning Mom.

I can wake up at 6:00 a.m. and throughouly enjoy life between then and around 10:30 a.m. As the day goes on I tend to drift a bit south.  But in the mornings, I'm full of hope.  Good morning, everyone!  I'm all homemade smoothies and gentle words and wake-up songs.

Now, today those little cherubs got a cold bowl of cereal before school, but hey I can't be perfect every single day. 

Let's move on to mid-day.  I prefer prepping dinner in the afternoon if I'm home to elevate the pain and heartache of a rushed, thrown together mess we'll call supper when my nerves are on the tailspin. Nothing is worse than that.  For me, there is nothing more satifsfying that feeding my peeps a full, delicious and sometimes healthy dinner.

If they eat it?  Even better.

For the most part, they do eat it.  It's either that or starve, so they usually opt for the latter. So a taco dish that is semi-prepped ahead and throw into the oven for an easy, filling dinner?  Yes, please.

And what family doesn't like tacos?

Albeit, tacos can become boring.  And messy.  Oh my gosh.  Throw in a 3 year old who thinks its funny to toss her plate across the table and send that taco into outer space and you've got yourself a dinner freak show.

I wanted to solve that little taco dilemma.

Why not bake them?  Why not find some foodie-glue to hold all that filling together?  So it doesn't go flying across my table?

This dish right here affirms that cooking does not have to be fancy or complicated.  Yet, can still taste delicious.  

I cooked the ground beef and mixed it up with some fresh garden salsa earlier in the day {pre-freak show time} and set it aside until I was ready to assemble 15 minutes prior to chow time.

These kind of recipes make me want to do the happy dance.  They don't require a culinary degree, nor ample time that takes up your Netfilx evening viewing.  God forbid.  Let's all save a little time to unwind in the evening.

And can we talk clean up?  These tacos bake up in a 9x13 pan.  You place the pan on the table, throw out some paper plates with extra toppings {we like shredded lettuce, salsa and sour cream} and let the groundlings eat.

The refried beans hold the ground beef and the ground beef holds the cheese, which melts over everything like a good old-fashioned spring shower.  Hence, the glue.  You will not have to hold on for dear life when you take your first bite, because guess what?  It's all stuck up in there like flies on honey.

MAKE THESE THIS WEEK.

Your family will thank me and you can move on to that glass of wine.

Or Bachelor in Paradise.

Beef & Bean Baked Tacos

These filling and flavorful tacos are a family pleaser! Bake all at once for easy clean-up.

INGREDIENTS:


  • 1 lb. ground beef, cooked and drained
  • 1 c. refried beans
  • 1 c. salsa
  • 2 c. shredded Colby jack cheese
  • shredded lettuce
  • sour cream
  • 12 corn taco shells

INSTRUCTIONS:


  1. In a small pan cook the ground beef over medium heat until no longer pink. Drain off the grease. Add in half of the salsa, stir and set aside.
  2. Place a wire rack in the bottom of a 9x13 baking dish and preheat the oven to 350 degrees. The wire rack will help keep the bottoms from getting soggy.
  3. To assemble spread some refried beans into the bottom of the taco shell, then layer with the ground beef. Fill all 12 shells and place upright in the wire rack within the baking dish.
  4. Top the tacos with the shredded cheese. Place in the oven and bake for 10 minutes, or until the shells are crispy and cheese is melted.
  5. Remove from the oven and top with additional salsa, shredded lettuce and sour cream. Serve warm.
