I'm on a breakfast kick lately and I'm not going to apologize for it.  Are you like me and can eat breakfast anytime of the day?  I don't know about your family, but we are a bit divided down the middle.  A few of us vote for breakfast for dinner, while others like to keep it strictly for the hours of 7 a.m. to 11 a.m.

They are missing out.

My mind is also swirling around breakfast ideas because in less than ONE MONTH {cue the thriller music} my kids head back to school.  This means we all need to be getting up early again and getting all our feet out the door by 7:45 a.m.

And when some of your children have been sleeping in until, say 8:30 a.m. this summer, this might be a tad difficult.  The thing is, they HAVE TO EAT before they leave.  And personally I try my best to give them something that sustains them until lunchtime.

I wanted to create a simple, yet creative breakfast idea for them that will kick off their year on the right foot.  And I did it!  This one is fun Mamas.

Growing up, I was the baby of the house and I distinctly remember being the last one left at home {my siblings were already off to college}, so in high school I ate a LOT of Kellogg's Eggo Buttermilk Waffles.  A lot of them.  By then I was getting up on my own and making my own breakfast before heading off to school.  I loved topping them the traditional way {butter and syrup} or my own way {peanut butter & jam}.

I tell you what these waffles are still delicious!  I headed to my local Walmart and picked these up while shopping {be sure to check out Walmart's Online Grocery Pickup service too!}.

Now, my kids love waffles and double bonus they also love eggs.  All three of them!  I wanted to combine the two into a wholesome and filling breakfast and these Open Faced Egg-in-the-Hole Waffles Sandwiches did just that.

By taking a Kellogg's Eggo Buttermilk Waffle, toasting it a bit, slathering in butter, cutting out the center and cracking an egg in the middle, flipping to cook, then topping with crispy bacon bits and a drizzle with maple syrup....well, my friends you've just created yourself a great breakfast.

It can be eaten portable, folded in half jet setting out the door {probably minus the maple syrup}, it can be prepped ahead of time {cook up that bacon on Sunday night!} and it can even be eaten as a TRUE sandwich {not open faced} by simply making two of these and stacking them together eaten straight out of your hand.

So many possibilities.

Why not make breakfast fun for your kids?  We all get tired of cold cereal and grabbing a granola bar as we run out the door.  Take a few extra minutes to give them something where as a bit indulgent, yet filling enough to get them through their day.

I'm guessing their mood will perk up a bit once they enter the kitchen that first day and see what they are eating.  I know mine would!

Open Faced Egg-in-the-Hole Waffle Sandwich

Back-to-School time is nearing! With that comes the need for hearty breakfasts without much fuss. This jazzed up waffle gives your kids added protein with an egg, plus a double bonus of bacon & maple syrup!
prep time: 5 minscook time: 10 minstotal time: 15 mins

ingredients


  • 2 Kellogg's Eggo Buttermilk Waffles
  • 2 eggs
  • 2 strips of bacon, diced
  • 1 T. butter
  • 2 T maple syrup
  • pinch of salt

instructions


  1. Heat a non-stick frying pan to medium heat and coat with cooking spray.
  2. Place the diced bacon in the pre-heated skillet and cook until crisp.  Remove from the pan and drain on a paper towel lined plate.  Wipe out the excess bacon grease.
  3. Place the two waffles in a toaster and lightly toast.  Remove from the toaster, spread with butter and using a rimmed drinking glass or cookie cutter, cut out the center of the waffle.  Lay the cut-out waffles in the pre-heated pan.
  4. Gently crack two eggs into the middle of the waffles and sprinkle with salt.  Allow to cook 1-2 minutes a side, depending on how firm or runny you like your eggs and flip gently.  Place the circle cut-outs also in the pan to warm back up.
  5. To serve, plate the egg-in-the-hole waffle on the plate, top with the crispy, chopped bacon and drizzle with maple syrup.
