I'll be the first to admit that 2019 has already gotten the best of me.  I blame it on many holiday gatherings spread out among the past three weeks.  When you have to travel to various shenanigans you can't knock out three Christmas' in a day in a half.

Instead you hit one gathering, wait a few days, hit another, come home and unpack and then repack and finally in a few more days GET IT ALL DONE.

With our last Christmas just two days ago, I found myself in a panic when I woke up yesterday morning at 7:09 a.m. to a text from my neighbor saying she'd be there at 7:40 a.m. to pick up my kids for school {we share carpooling}.  Our house was silent and DARK.  Not a soul was stirring.  Every single one of us was still recovering.

Oh, how I would have wished for one of these delicious breakfast burritos to chuck out the door for them to eat on the way to school.

Because, I would do that....I'd chuck that thing across the yard, say goodbye and shut the front door.  Instead I stood with my robe half on and fridge open wishing a quick breakfast would speak to me in the next 3 seconds.

Like everyone, I need to detox from the holidays.  You are lying to yourself if you aren't raising the white flag with me.  I ate way too many cookies, way too much fudge and the second helpings of whatever {take your pick} need to cease.

A long time partner of mine, the Iowa Egg Council, has once again jumped on board to help me spread the word about healthy eating.....with eggs!

I've loved eggs since as long as I can remember so we basically go together like peas and carrots.  Eggs can and will help you stick to a New Year's healthy eating regimen.

Nutritionally, eating an egg is like taking a multivitamin pill. They are rich in protein and loaded with vitamins and minerals. One egg has 13 essential vitamins and minerals in varying amounts, six grams of high-quality protein, unsaturated fats and antioxidants, all for just 70 calories.  And being from Iowa {the #1 egg producing state in the country}, I do feel it is my duty to chat up these little darlings. 

5 Tips for healthy eating in the new year revolve all around eggs. 1) Preparing breakfast ahead will ensure you eat breakfast {these burritos}. 2) Make sure meals and snacks are of high protein {eggs}. 3) After exercise have a high-protein snack {again, eggs}. 4) Keep healthy snacks handy {hard-boiled eggs}. 5) Meal plan for the week {egg salad, egg sandwiches, egg casserole, etc.}.

I've made breakfast burritos before {we'll often eat them for dinner}, but this time I checked all my ingredients and chose healthier options.

I opted for a whole wheat low carb tortilla, some lean pork sausage, added veggies {peppers and spinach} and topped them with a low fat, higher in protein cheese {Parmesan}.  Plus, the star of the show, EGGS.  Small steps like these can lead to bigger results when watching your weight and eating healthy.  Eating high-protein eggs for breakfast reduces hunger and calorie consumption at lunch and throughtout the day.

And double bonus.

I made them freezer-friendly too!

This batch makes 20 breakfast burritos and unless you are feeding a basketball team, you will more than likely have some left over.  Take some help from parchement paper, which keeps them wrapped up tightly in the freezer and is oven safe.

Plus perfect if you get all crazy and take orders from the family on different toppings, as Sharpie markers write beautifully on parchement paper too!

Once wrapped up they stay good in the freezer for up to two months.  They'll never last that long, but it is my job as a food blogger to tell you all the rules.  The reason they won't last is because you will wake up late on random Tuesdays and have to fly around the house like a crazy women trying to get everyone out the door.

This is when you pull out a burrito, place it in the microwave and nuke it for 3-5 minutes, turning once until heated through.  You will then place it in their chubby hands as they walk out the door.  If you're a really good Mom, you'll have a few extra minutes and they'll be able to eat it at the table while dunking it in taco sauce {my favorite}.

Loaded Healthy Freezer-Friendly Breakfast Burritos

Having breakfast options prepped and ready to grab-n-go is ideal when you have busy mornings. These healthy, loaded breakfast burritos are great fresh & even better pulled from the freezer and eaten throughout the week.
prep time: 30 minscook time: 30 minstotal time: 60 mins

ingredients


  • 2 - 10 pks Ortega Whole Wheat Low Carb Tortillas
  • 1 lb pork sausage
  • 14 eggs
  • 1 cup spinach, chopped
  • 1 sweet red pepper, finely diced
  • 1/2 cup shredded Parmesan cheese
  • taco sauce, optional
  • salt & pepper to taste
  • parchment paper for wrapping

instructions


  1. In a large skillet brown the pork sausage until cooked through.  Drain off any grease and set aside.
  2. In a large bowl whisk together the eggs and season with salt and pepper.
  3. Return to the skillet and saute the diced pepper and spinach, just until slightly soft and wilted.  Add the cooked sausage back in.  Stir in the eggs and cook, stirring frequently until eggs are set and everything is mixed together. Toss in the Parmesan cheese. Turn off the heat and allow to cool slightly.
  4. Form an assembly line of square pieces of parchment paper and tortillas.  Place 1/2 cup to 3/4 cup of the scrambled egg mixure on the tortilla.  Top with taco sauce if desired (I highly recommend!) and wrap up tightly, tucking the parchment paper under the burrito and lay seam side down on a baking sheet.
  5. If eating right away, place the baking sheet in the oven at 350 degrees for 10-15 minutes, just reheating the tortilla.
  6. If freezing for later, place the wrapped burritos in a large plastic resealable bag in a flat layer.  Label with a black Sharpie marker and freeze.  Burritos will be good for up to 2 months in the freezer.
  7. When re-heating directly from the freezer,  microwave for 3-5 minutes turning halfway or bake at 350 degrees for 30-40 minutes or until completely cooked through.
