There is no doubt in my mind that we eat more salads in the
warmer months. It’s just more fun, right? Produce is fresh and abundant + when
we are hot, lighter meals are easier to make and eat.
The problem is salads can very easily be BORING.
But not this one!
My new BBQ Chicken Chopped Salad has everything you
want – a flavorful protein, a sweet + salty ingredient combo and lots of juicy,
fresh produce.
Cookies and I have
embarked on a 3-part foodie series and this second installment for Summer is
for all my salad lovers!
Remember our first creation was my Barbecue
Chicken Pizza Rollups. A fun combo of store-bought pizza dough, shredded
chicken, BBQ sauce, cheese and seasonings all baked together until bubbly. That
one targeted all our pizza fans.
Today we are showcasing salad in a unique way – one with
tender, juicy barbecue chicken, drizzled with an easy honey barbecue
vinaigrette.
For this recipe, we decided to coat the chicken tenders in
their Flavor
Enhancer prior to cooking, then brush them with Cookies
Sweet Hickory barbecue sauce before plating. This sauce has a splash of
pineapple juice with hints of cayenne pepper to create a thick, sweet and zesty
barbecue sauce.

Flavor Enhancer seasoning is something I always try to keep in my pantry.
We use it on proteins, roasted potatoes in the oven, grilled vegetables and so
much more. It’s the perfect blend of salt, pepper, chili powder and garlic.
The chicken in this salad cooks up quickly in the air fryer
(or you are welcome to grill it) and can easily be prepped ahead. The rest of
the salad is all fresh or canned produce – chopped romaine, cherry tomatoes,
black beans, corn, fresh chives and sharp cheddar cheese.
And have I mentioned the homemade vinaigrette?
Such a fun one – in a jar you combine Cookies
Sweet Hickory barbecue sauce, honey, apple cider vinegar, avocado oil and
spices. This one serving of dressing goes a long way over the salad and easily
feeds two people.
