Cottage Cheese Pizza Bowls

If you love pizza toppings and want a healthier option for weekly lunches, then this recipe is for you!

My new Cottage Cheese Pizza bowls are delicious and filling.

This post is sponsored by AE Dairy, but all opinions are my own.

Cottage cheese pizza bowls prepped in glass dishes

Are you one of those people who pick off all the pizza toppings and sometimes ditch the crust? If so, this recipe is for you.

Plus, double bonus – these bowls are healthy!

My new Cottage Cheese Pizza Bowls are easy to prep for weekday lunches and are AMPED with protein, not to mention lower in carbs.

The star of the show is of course, AE Dairy’s 4% large curd cottage cheese (my favorite). The one with the most bang for its buck as I like to say. It’s creamy and has twice the texture due to the large curds.

Just a ½ of a cup has 12 grams of protein and only 110 calories!

This cottage cheese is the base of the bowl and honestly what you put in after this is truly up to you….but I’m going to show you how I made my “pizza” version.

Glass bowls on a tray filled with pizza toppings

With the new year officially started many of us are thinking about healthier eating options, me included.

These Cottage Cheese Pizza Bowls allow you to prep as many as you want for the week ahead and they become a delicious and healthy lunch option.

I would recommend using glass bowls for assembling them individually – here is a set of 4 with lids that work perfect. I have them and use them often, plus glass is ideal for reheating throughout the week.

To make them pizzeria style, I loaded these up! Because who wants boring pizza toppings? If you do my exact combination each of these bowls comes out to a whopping 38 grams of protein!

But of course, add whatever toppings you enjoy – mushrooms, olives, ground turkey or sausage – really any leftover meat you have on hand to use up would be great.

Once assembled simply bake in the oven to melt all the yumminess together for about 25 minutes, then allow to cool, cover and keep in the fridge for the week.

The cottage cheese gets even creamier after it melts, almost tasting like mozzarella cheese on a pizza. And the added bit of grated Parmesan gives it a tangy bite.

When ready to eat, eat as is straight out of the bowl with a spoon or find a healthy dipper!

I really have been enjoying baked whole wheat pita chips, but I’m thinking any sliced veggie would be fun too, carrots or maybe sliced cucumbers?

AE Dairy has their products in stores all over the Midwest. You can view their products via their store locator HERE.

It’s meal prep season so why not get started!

I hope you enjoy these cottage cheese pizza bowls, a healthy lunch option for busy weeks. What toppings are you putting on yours?
