Lemonade Poke Cake

Perfect for warm weather, my new Lemonade Poke Cake will satisfy your sweet craving!

Ladies and gentlemen, this is the cake of the Summer.


The. Cake. Of. The. Summer.


We all devoured this cake to the point of embarrassment. For further proof of its greatness, I have what you might call a “lemon hater” in my house and he ate two slices.


This cake is heavenly and just pure bliss.

I used AE Dairy’s No Added Sugar Lemonade (but any version can be used – their classic & strawberry is divine too) and it provided just enough sweetness in both the cake batter and the Jello mixture that gets poured into the holes of the warm cake. They make this lemonade in small batches and it’s made with real lemons and has zero artificial colors or preservatives.


I’m sure most of you have enjoyed a poke cake at some point in your lives – there are SO many different varieties.


Dare I say this might be one of my favorites?

And while this cake may look fancy, it’s not.


AE Dairy No Sugar Added Lemonade is added to a simple lemon cake mix + a lemon Jello mixture + another simple whipped topping and pudding frosting. Simple, simple, simple.


This cake sets up beautifully in the fridge and a slice straight out cold is AMAZING.

And for a doctored-up box cake look at how beautiful this one turns out? She’s a pretty light, yellow color and the sliced lemons on top immediately tell everyone her flavor.


I personally love that the cake isn’t “too tart” – I didn’t want anyone wrinkling up their nose and squinting their eyes at first bite! There is just the perfect amount of light lemon flavor – with a whipped topping to offset the sweetness.
