Creamy Potato and Broccoli Bake



This hearty, creamy, cheesy hot dish is great as the main event or just as a side.


Please let me apologize in advance.  I've got a lot of bacon and a lot of chocolate coming up on the blog {unfortunately not together}.  I tend to get on a roll with things...sorry.  When you've got lots of bacon in the fridge you've got to use it up!

Two weeks ago I had forgot about some bacon in the back of the cheese drawer and it went bad.  It was an awful, awful day.  Especially when you are buying the good, organic stuff.

Therefore I vowed to never let that happen again.  So bare with me.

As for the chocolate, I have no excuses for that.  I just love chocolate.

So the bacon is up first.  And I should said the bacon in this dish is just a 'sprinkling' or a 'garnish' if you will.  It definitely isn't the star of the show, but it sure does accent the dish well.  So I thought I better talk about it.


We had this dish on a Sunday night and then again the next night as there were leftovers, but I'm imagining this as a great potluck dish or even a breakfast/brunch meal.  You know, for a meal that is a bit more special?

Speaking of, when was the last time I went out for a good brunch?  It's been SO long.  I love a good brunch where you kill two meals with one stone.  I go home stuffed for hours, if not the whole day, only usually to be disturbed by the littles begging for food again the minute after we get home.

Please tell me my kids aren't the only ones to do this.

And although I have tried variations on this, I'm thinking swaps could be made.  Cauliflower instead of broccoli.  Shredded sweet potato added to the hash browns.  Swiss cheese instead of cheddar. Bacon left out to make it meat less.

Wait I didn't say that.

Leave the bacon in.

Oh...so I guess I'm on a pizza kick too.  But that is normal because pizza {of some kind} is a staple in our house.

Creamy Potato and Broccoli Bake
Print this Recipe!

4 c. broccoli florets
6 c. frozen shredded hash browns
8 oz. softened cream cheese
1 c. milk
1 t. garlic powder
1 t. onion powder
1/2 c. Parmesan cheese
2 c. shredded cheddar cheese
4 strips of bacon, chopped

1.  Preheat the oven to 375 degrees and grease a 9x13 baking dish.
2.  In a skillet cook the chopped bacon until crispy.
3.  In a large bowl combine the cream cheese, milk, seasonings and shredded cheddar cheese.  Fold in the hash browns and broccoli until evenly coated.  Add in 3/4 of the bacon {and bacon grease if you are daring!}.
4.  Place mixture into the pan, top with remaining bacon and Parmesan cheese.
5.  Bake uncovered for 1 hour.  Serve warm.

    This looks like heaven in a casserole dish! Must try it! I would just sprinkle the bacon on top before serving so that my vegetarian daughter would eat it too. Love making recipes that the whole family will like!
