S'mores Cookie Bars

Marshmallow fluff and Hershey bars are stuffed into a graham cracker bar.
They taste just like a regular s'more! With less mess.

I first introduced this dessert back in 2011. At that time I had just two kiddos, both in diapers and I'm guessing I made these out of sheer desperation to sink my teeth into something blissful.

My life then was me working part-time out of the house and running this blog the remaining time. Life was certainly busy, but in a much different way that it is now. Those two kids have now turned into three kids, one on the brink of teenage-hood.

Either way - back then and today - our family still loves a sweet treat. Preferably homemade by me. I've spoiled them!

These bars have EXACTLY what you'd find in a traditional s'more - graham crackers, marshmallows and Hershey's milk chocolate bars.

So my friends, if you enjoy a regular s'more by the campfire but could do without the smoke of the fire in your face and the mess of the drippy, melty marshmallow running down your hands, then this dessert is for you!

Marshmallow fluff and Hershey's milk chocolate are stuffed in between two layers of a graham cracker style cookie dough. That way the "mess" is contained!

Now these bars are RICH.

So honestly I love that they make just an 8x8 pan. You can cut them into regular, good sized bars and get nine or cut that in half once more and it will give you 18. 

Trust me....a few bites is pure bliss!

The graham cracker bottom and top crust is both sweet and hearty and holds up perfectly sandwiched around the marshmallow and chocolate. These bars also cut super easy once cooled {don't you just hate when bars crumble up and don't make nice even squares?}. No problem with these.

Keep these covered for a few days or stick in the fridge covered for even longer freshness. They travel well and I promise everyone will love them!
