Cadbury Mini Egg Blondies

Hippity Hop! Easter is on it's way.
These Cadbury Mini Egg Blondies are easy to bake up and delicious to eat.

For as long as I can remember I've been a big fan of Cadbury eggs - this mini hard coated milk chocolate version and the original big egg version full of that delicious cream. They were a staple in our Easter baskets growing up!

So this year I decided to put those mini eggs in my very tasty blondie recipe. This is a blondie recipe I've been using for years and each time I bake them I add in different things - butterscotch chips, nuts, shredded coconut, mini M&Ms, I've really done it all.

And this was a great idea! These turned out amazing.

Bags of these Cadbury mini eggs can be found at any grocery store this time of year. You'll need just one bag for this recipe, but I strongly recommend grabbing two (one of snacking, of course). 

In this recipe I chopped up almost half of the bag to put in the blondie batter and left the remaining whole to dot on top after baking.

Do you know what's great about these? They get all melty in the baking process....so you never crack down on a hard egg.

These blondies are soft, buttery, ooey, goeey and rich. Pretty much everything you want in a dessert, right?

In my opinion the perfect sweet treat to bring along to any Easter celebration. They will go fast! Both kids and adults will love the Easter theme and will want a square (or two!).

These blondies have a bit of a crunchy top, but a melty center. Not just your typical dessert "bar"! When people take their first bite watch their eyes light up.

And then they'll ask for the recipe!
