This super easy 7 ingredient mix and bake pie is a fun one for coconut fans!
I have loved coconut for as long as I can remember, so any dessert with this fabulous ingredient is a big win for me. Now I realize it's not for everyone, but if you're on my side don't scroll by this one too quickly.
The biggest reason?
It's incredibly easy. You dump seven ingredients in a bowl, mix it together and pour it all into a pie plate and bake. That is it.
Easy enough for even a kiddo to make!
I found the original recipe for this pie in my late Grandma's church cookbook. Everyone time I opened that cookbook somehow it would open to the pie section so I had glazed over this recipe a few times over the years but never made it.
Last week I noticed a bag of sweetened coconut in my pantry and once again I thought of "this pie" so I figured why not....lets try it.
I did make a couple tweaks to my liking and I think it turned out great!
If you are a custard-style pie fan, you might as well put this coconut one on your list to make. After it bakes, cools and then spends some time in the fridge to firm up it becomes a creamy sensation with some crispy bites of crunchy coconut.
The perfect bite.
Everyone in my family loves coconut so it was a big hit here.
