Coconut Dream Bars

We absolutely adore anything coconut in our house.
My new Coconut Dream Bars are sweet, chewy and have a deep brown sugar 
and coconut flavor.

For years and years my family has loved my Mom's Coconut Cake. My kids request that she make it for birthdays and holidays. If you love coconut and have a special occasion you really need to check it out.

Since we are such big coconut fans, I decided to "dream" up another dessert for them (because let's be honest, we don't always have time for a big cake production). So enter these delicious bars!

With a simple brown sugar shortbread-like crust and a creamy, custard-like coconut filling...this two layered dessert is easy to make.

They are buttery (sorry, don't count the calories on this one!) and full of sweet coconut flavor. Every one of my kids said they were a hit and then instantly said, "when are you making them again"?

Haha! I gave a few bars to a friend and stashed a couple in the freezer (you know, to save for a rainy treat) and then we ate the rest.

Look at all that flakey greatness!

These cut up beautifully and are such a fun dessert for Spring and Summer. Perfect for a bridal or baby shower, a Memorial Day picnic or your mid-Summer 4th of July party. They hold up well and can be kept at room temperature or in the fridge for a cold treat.

And did I mention each bite just MELTS IN YOUR MOUTH?
