Hail, the Queen we now call the Instant Pot.

I jumped on the bandwagon last winter.  Have you?  If not, what are you waiting for?  I get it, one more appliance people say you HAVE TO HAVE.  I felt a bit the same way, but since purchasing one, I have not regretted it.

Kind of like I've never regretted having dessert.

Just to keep things in perspective.

Last February, after much poking from other bloggers and friends I purchased this version: the Instant Pot LUX80 8Qt 6-in-1 Multi-Use Programmable Pressure Cooker, Slow Cooker, Rice Cooker, Saute, Steamer and Warmer.

Minus the first time I used it {I was a nervous wreck, dancing around...I kept imaging it would blow up in my kitchen...it didn't}, I've since learned it's VERY easy to use and is a major time saver.  I've made hard boiled eggs, homemade pasta dishes, cooked a roast, shredded chicken from frozen to mouthwatering in just 15 minutes, baked bread and even made French toast!

Let's just say most, if not all recipes, can be adapted for the Instant Pot.  My 8 Qt version is perfect for our family of 5, but they do come in a 6 Qt and 3 Qt versions too.  There are many different brands out there and I'm sure they work just fine, I'm just familiar with this version.

Since last Winter, I've heard you all clamoring for Instant Pot recipes.  I get messages, you leave ideas on my Instagram thread....I get it!  Naturally, I do anything to please my readers, so I've hand-picked 35 of my favorites.

We had open house last night for the older two {entering 2nd & 3rd grades}, all of their supplies are tucked safely in their desks and they've met their teachers.  Today we'll be getting their first day outfits ready, running some last minute errands and having a simple day at home.

I have one child totally excited and one child who could take it or leave it.  Plus, a very excited preschooler who will start right after Labor Day.  The hours are counting down!  This year I will have my afternoons to myself {i.e. a quiet house}, which will give me some much needed time to work on the blog and get my life together after this busy summer.

I know many who know me personally will say I'm organized and I get that, I probably am a bit more organized than the average person, but I still feel like I have areas to improve on.  

I'd love to lose the monsterous pile of shoes at our back door and invest in a cubby system where everyone has their own place.

I'd love to get my butt in gear and prep more meals on Sunday so come Thursday I'm not scrambling to find what to put on the table.

I'd love to have an organized snack bin, veggie bin and fruit bin in my fridge, so my kids could just grab one of each when packing their lunches at night.

I'd love to have multiple recipes and blog posts "on deck" ready to go so I could take a few afternoons a month just for myself.

But guess what?  So far, I have not accomplished these things.

Instead I bake brownies.

My point is, no matter how much you think another Mom has it together, you are probably wrong.  They probably still feel like they could do more.

So a few days back, while staring at that Mount St. Helen's pile of shoes at the back door I was also staring at some leftover shredded zucchini on the counter.  I ignored the shoes and instead started thinking dessert.

We all know shredded zucchini is a wonderful addition to any baked good.  It gives that sweet treat a moistness without any added fat.  In fact, IT'S A VEGETABLE.  I can get down with that.  I'll hands down admit I don't get enough of those green miracles, so why not add them to chocolate.

It works, right?

A few years back I made homemade brownies for the first time.  Trust me, I love any boxed mix as much as the next person, but I was shocked at how easy they are to make from scratch.  And did you know they are just as delicious without flour?  Yep!

All you gluten-free peeps out there will love this one.

Plus you'll get in some added "steps" on your FitBit from whisking this batter together for 2 minutes straight {just trying to help you out where I can, you're welcome}.  And trust me when I say you will NOT even know the zucchini is in there.  You cannot see the green, the kids will NOT freak out, all will be okay.

These brownies are fudgy, rich and I'm guessing your kids will be requesting a glass of ice cold milk.

Flourless Zucchini Brownies

From scratch brownies are so easy and yes they can easily be made without flour! This version is also amped up with shredded zucchini from your summer garden.
prep time: 10 minscook time: 30 minstotal time: 40 mins

ingredients


  • 6 T unsalted butter
  • 3/4 cup sugar
  • 1 cup mini semi-sweet chocolate chips
  • 2 eggs, room temperature
  • 1 t vanilla extract
  • 1 heaping T unsweetened cocoa powder
  • 3 T cornstarch
  • 1/2 t salt
  • 1 cup shredded zucchini, pressed and drained of excess water

instructions


  1. Preheat the oven to 350 degrees.  Line a metal 8x8 baking dish with tin foil, allowing it to lap over the edges (built in handles for later).  Spray generously with cooking spray.
  2. In a small saucepan over low heat melt the butter, then add the sugar and whisk to combine.  Then add in the chocolate chips continuing to stir until smooth.  Take off from the heat and whisk by hand for 2 minutes until glossy and smooth.
  3. Add in the eggs one at a time, followed by the vanilla extract and salt.
  4. Using a sifter, sift in the cocoa powder and cornstarch, whisking into the batter, again stiring by hand until smooth and shiny.  Add in the shredded zucchini.
  5. Pour the batter into the tin foiled lined pan and spread evenly.  Bake for 25-30 minutes or until the brownies are set in the center.  Allow to cool completely before lifting out the tin foil and cutting into 9 squares.
  6. Serve each square with a scoop of ice cream!

I recently tried to sit back and think of how many peanut butter and jelly sandwiches I've eaten in my lifetime.  I might as well have tried to think of how many times I've used the restroom.  It's that many.  For 37 years I've probably whipped one up and had it on the go at least weekly, if not a few times a week {minus those early baby years}.

It has always been my go-to sandwich when in a pitch or just craving that smooth, nutty and sweet flavor.  Once I became a Mom that tradition continued.  If you start your kids on it early, they'll love them the rest of their life!

Here in Iowa, school starts soon {praise Jesus} and with that comes all THE THINGS.  Registering them, buying school supplies, making sure they have shoes that fit, cleaning out dressers and drawers, attending open houses, getting new socks, buying new backpacks and most importantly packing that everyday lunchbox.

I usually let my kids eat hot lunch at their school cafeteria once a week {often Fridays, because let's face it by Friday, I'm done}, but for the remaining days of the week we are packing lunches.  It's much more budget friendly and then I actually know what they are eating!

Honestly, I've been holding on to this little trick for traditional PB&J's for years.  I've never talked about how I prep them, I just did my thing and my kids never knew the difference.  But now, after almost 9 years of food blogging I'm sharing my secret.

Right now is the perfect time of year to do this.  My kids love PB&J's and with two in full-time elementary school I could possibly be sending 10 sandwiches out the door a week.  Which basically means dragging out the ingredients each morning while everyone is scrambling to get out the door.

Instead, I prep them all on Sunday and FREEZE THEM.

Yep, I grab a loaf of bread, a container of Jif and a jar of Smucker's and take just 15 minutes on Sunday to make 10 at a time.  Then we are ready for the week ahead.

But, how do I keep them from getting soggy you say?

Here's the trick.

You need to sandwich the jam in between two layers of peanut butter.  That way the drippy, sweet jam never touches the bread.  Traditionally, most people, will just spead peanut butter on one slice and jam on the other slice, but by spreading peanut butter on both slices of bread, then topping one of those slices with the jam, it ends up making all the difference between a bad frozen sandwich and a good one.

After that wrap tightly in plastic wrap, label if desired and place in the freezer.

Then, that morning when packing lunches, you simply grab a sandwich out of the freezer and it's thawed come mid-day when ready to eat.

Easy as pie.

Or sandwich.

How to Freeze PB&J Sandwiches

Freezing pre-made PB&J sandwiches is a great time-saver once school is in session. Simply pull one out of the freezer in the morning, put it in their lunchbag and they are thawed by noon!
prep time: 15 minscook time: total time: 15 mins

ingredients


  • 1 loaf of sandwhich bread
  • 16 oz. jar Jif Creamy Peanut Butter
  • 32 oz. jar Smucker's Strawberry Jam
  • roll of plastic wrap

instructions


  1. On a large cutting board, assemble ingredients/tools - bread, peanut butter, jam and a butter knife.
  2. Place two slices of bread on the cutting board.  Spread peanut butter on one side of EACH of the two slices of bread.  This will help to prevent the jam from soaking through and making one side of the sandwich soggy.
  3. Spread the jam on top of the peanut butter on one slice of bread.  Place the two slices together to form a sandwich.
  4. Wrap tightly in plastic wrap, labeling "PB&J" and place in the freezer.  Sandwiches will stay fresh for up to 1 month.
  5. When wanting to eat for lunch that day, simply remove a sandwich from the freezer and place in a lunch tote, bag or or the counter and it will be thawed by mid-day.  Thaw time is generally a couple hours.

Here in Iowa our kids head back to school towards the end of August.  We are just a couple weeks out!  Who is rejoicing?  Who is sad?  Who is nervous?  Who wants to throw a party?
