Everything Bagel Dogs

Unless you've been sleeping under a rock, us folk here in the Midwest are FREEZING.  I'm running out of brain space for the amount of days my kids have missed school.  I don't even know what day it is because they are all starting to feel like a Sunday afternoon.

You know the ones...where you want to take a nap, yet the kids aren't allowing it and everyone just NEEDS TO GET BACK ON A SCHEDULE.

I screenshotted the weather app on my phone this morning when I rolled over because I'm hoping I never have to witness this craziness again.  It was -27 degrees below zero with wind chills in the negative 50's.  Everything is shut down around here.  As of right now our kids will still be attending school on June 1st.

Which hasn't happened since I was young.

Okay, moving on.  It's cold and even I'm sick of this 85 year old mundane conversation.  Let's switch topics to food.  Something I never get sick of.

On day 2 or 6 {whose counting} of school cancellations I whipped up these Everything Bagel Dogs for lunch.  I was running out of options {hey kids, how about another peanut butter and jelly?}. I was going to wait until Super Bowl Sunday to whip these out, but I caved.

Although, VERY good option for this Sunday's game, just saying.

The natives were restless and I randomly made these and declared a picnic lunch in the living room to change up our mundane snow days.  The kids loved them!  They really do taste like an everything bagel on the outside.  I used the popular Trader Joe's seasoning, but any brand will do {or make your own}.

I also used my friend Biz' Skinny Pizza Dough recipe to wrap these dogs in.  Which is another recipe taking over the Instagram world.  You need to make it {it can stay in the fridge for up to 7 days}. I've used it for traditional pizza, calzones, pot pies and Biz herself even made English muffins out of it this week!

If you'd rather buy some Pillsbury refrigerated pizza dough at the grocery store, by all means go for it.  I am NOT above store bought short cuts.

What makes these perfect for your next party or this Sunday's game is that they can be prepped early, just stuck them in the fridge and then bake off during halftime.  With only four ingredients these are super simple and probably shouldn't even be called a "recipe".

Kids will adore them and you'll see many adults sneaking a few as they walk by the food line.  If you have any leftovers, throw them in a bag and reheat in the oven the next day.

Everything Bagel Dogs

A super fun appetizer for any game or party! These bagel dogs are a hit with kids and adults alike. Serve with traditional ketchup or a bbq or mustard sauce.
prep time: 20 minscook time: 18 minstotal time: 38 mins

ingredients

instructions

  1. Preheat the oven to 400 degrees and lightly grease a cookie sheet with cooking spray.
  2. Cut the 10 hot dogs into thirds and set aside.
  3. Lightly flour a clean surface and a rolling pin and gently roll out your pizza dough into a rectangle shape of 1/4 inch thickness.  Using a pizza cutter, cut into 30 strips.
  4. Take a strip of dough and wrap around the hot dog and place on the cookie sheet.
  5. In a small bowl beat the egg and brush onto the dough wrapped hot dogs.  Sprinkle generously with the Everything Bagel seasoning.
  6. Bake for 15-18 minutes or until golden brown.
  7. Serve warm with ketchup or your favorite dipping sauce.

It's on my list and it's been on there for awhile.  I love how a meal can be put together quick without much fuss.  Plus it can make foods SUPER crispy, like they just came out of the deep fryer but without the mess of hot oil...and the calories.

For the last couple of years I've found that I love my mornings.  I enjoy waking up before the kids when the house is quiet and dark.  I turn on the local news {I'm kinda a news junkie}, I sit down open my emails, read my devotional and just take in the silence.

I may or may not start the coffee.  Some mornings I wait until the kids are off to school so I can actually drink it HOT.  Moms, you know what I'm referring to...there is nothing worse than getting one hot sip, getting interrupted for 15 minutes to only come back to a cold cup.

Not fun.

I also have a tendancy to not get breakfast until later.  I'm finding I'm not hungry right away.  Anyone with me?  Then when I am hungry I've found I just want a small bite.  Either an egg or a small sweet bite {preferably healthy, but I can't help it I have a natural sweet tooth}.

Lately I'll whip up a batch of baked oatmeal to last the entire week. It's heavenly.  If you've been watching my Instagram stories you've seen it!  By the way, get over there and watch my stories, some great behind-the-scenes stuff.

After a couple weeks of baked oatmeal I wanted to switch it up a bit. Still love the stuff, but golly everyone needs to change it up after awhile.

I still wanted a "healthy" sweet bite, so I switched it to cookies!  Who doesn't want a cookie for breakfast?

Me!  I do.

Many, many moons ago I saw that The Lean Green Bean did a similar cookie.  I had been eyeing it, but as usual knew I would change it up not only because that is what I do but because I only had certain things on hand.

This recipe makes 12 cookies.  Just enough to have on hand for the week.  Enough to share with the kids {my kids love them as an after school snack} and enough to get you through a breakfast each week if you're like me and often have something fairly light.

I love having one of these after the two older kids are shipped off and it's just me and my youngest at home in the mornings before she goes to afternoon preschool. If you are a coffee or tea drinker, they go perfect together. 

Give it a dunk!

I love that these "protein" cookies are made without actual protein powder.  Not that I'm against protein powder {I'll use it in smoothies sometimes} but I'm not a huge fan of the taste.  Anyone else feel like it has a weird after taste?

Maybe it's just me.  Who knows.

Regardless, each cookie has 6 grams of protein.  Nothing shooting off the roof, but enough to steady your appetite.  It's also uses oat flour instead of regular all-purpose or whole wheat flour.  Have you used oat flour?

No need to buy anything special - just pulse whole grain old fashioned oats in a food processor a few times until it resembles coarse crumbs - instant flour.  That's it!  Then throw in all the remaining ingredients {how about that mashed sweet potato!} right into the food processor and your batter is done.

Who doesn't love a batter that gets put together in a food processor?  No dirtying all the bowls in your kitchen.

These cookies puff up so nice.  They are fluffy and soft and keep their shape perfectly.  I keep mine stored in an airtight container on the counter and they stay fresh for a few days {which is about how long they last}.

Sweet Potato Dark Chocolate Protein Cookies

These soft and fluffy protein cookies are a great snack to have on hand throughout the week.
prep time: 5 minscook time: 11 minstotal time: 16 mins

ingredients


  • 1 medium sweet potato, cooked  and peeled
  • 1/2 cup natural creamy peanut butter
  • 2 eggs
  • 1 t vanilla extract
  • 1 t cinnamon
  • 3 T honey
  • 2 T chia seeds
  • 1/2 cup pumpkin seeds, shelled & salted
  • 1/2 c oat flour (just oats pulsed in a food processor)
  • 1 t baking soda
  • 2 oz dark chocolate, chopped

instructions


  1. Preheat the oven to 350 degrees and lightly grease a baking sheet with cooking spray.
  2. In a food processor pulse the oats until they resemble course crumbs.  Add in all remaining ingredients except the pumpkin seeds and chocolate.  Blend until smooth.  It should be slightly thick.
  3. Add in the pumpkin seeds and half of the dark chocolate chunks and pulse once to combine.
  4. Using a cookie scoop, scoop out 12 cookies onto the baking sheet.  Top with remaining chopped chocolate.
  5. Bake for 11 minutes.  They should puff up and be slightly soft to the touch.  Allow to cool and store in an airtight container for storage.

I'll full on admit it.  Our holiday celebrations were long and drawn out, we traveled around, a bout of sickness hit our youngest {which in turn put me way behind in many areas} and already our kids have a day off of school this Friday.

I don't know about your family, but we currently have three sports going on between two of our kids.  I need my meals to be planned, intentional and easy.  Recipe #1 fit that bill and recipe #2 certainly fits that bill.  January is a much busier month than many people think.

This year I want to make sure my recipes in 2019 have better timing.  Do I have a great, over-the-top chocolate cake that I'm dying to share?  Yes, I do.  Is it the right time to showcase it?  Probably not.  While we all want to sink our teeth into that decadent splurge, for many of us it's not going to happen.

We just ate ALL THAT STUFF last month.

January is a detox month for many {don't worry I'll bring that cake back around Valentine's Day}.  These first two recipes for the year have been about healthy and ease.

Healthy for obvious reasons and ease for all us Moms who are scrambling through these winter sports while simultaneously trying to feed our humans.

Let me tell you THIS.

I started this recipe at 9:07 a.m. and it was finished by 9:16 a.m.  If you're doing the math that is less than 10 minutes!  And yes, I often make savory, dinner style dishes at odd times of the day for a few reasons.

1 ---- > The natural light is better in the morning in the winter for photography purposes.
2 ---- > It's the time of the day when I have the least amount of people in my house.
3 ---- > I'm weird and cook when I want.

I'll be honest.  I wasn't quite sure if I could tackle this quick dish in just 10 minutes {is that really possible?}, but the sauce is just three main ingredients and the angel hair pasta cooks up super quick.  It can be done!

And let me tell you.....the aroma that fills your house is like angels singing.

I like this quick dish for so many reasons.  You can easily make it a lunch or a dinner.  Kids and adults both love it.  It's made with whole ingredients and healthier whole wheat spaghetti.  It can be fancied up for a more formal dinner by adding a side salad and a hunk of crusty bread.

I love this dish.

Tonight my kids have youth group right after school.  Then once they get home from youth group we have about 45 minutes before the oldest and the husband head off to batting practice for baseball.  Normally, 45 minutes to cook, serve and eat dinner might not be enough time but with this simple dinner it's fine!

More than enough time.

10-Minute Tomato & Garlic Whole Wheat Spaghetti

This simple spaghetti comes together in just 10 minutes and has incredible flavor. Serve with a side salad and dinner is set!
prep time: 3 minscook time: 10 minstotal time: 13 mins

ingredients


  • 8 oz whole wheat angel hair spaghetti
  • 2 T olive oil
  • 4 cloves, garlic minced or crushed
  • 1 heaping tablespoon tomato paste
  • 14.5 oz can petite diced tomatoes
  • 1 t sugar
  • 1/2 t salt
  • 1/2 t pepper
  • 1 t dried basil
  • 1 t dried parsley
  • 1 t dried minced onion
  • fresh, shaved Parmesan cheese

instructions


  1. Bring a large pot of salted water to a boil.  Add pasta and cook for 5-6 minutes or until al dente.
  2. Meanwhile, heat the olive oil in a high rimmed skillet over medium high heat.  Saute the garlic for 30 seconds, just until fragrant but not brown.  Stir in the tomato paste and break up and swirl to combine.
  3. Reduce the heat to low/medium and add in the diced tomatoes and seasonings.
  4. Drain the pasta (do not rinse).  Toss the pasta with the warm tomato sauce, stirring for about a minute to combine.
  5. Divide into 4 bowls and sprinkle with freshly grated Parmesan cheese.

NOTES:

If you want to beef up this dish a bit, try adding some chopped mushrooms or zucchini when sauting the garlic.
