Air Fryers are essentially an amped-up countertop convection oven. It works because it circulates hot air around the food to produce a super crispy and crunchy exterior - without the grease, oil and extra calories.

Since getting one back in November we use ours almost daily to reheat leftovers and make quick meals for the kids. And...to make full meals! Today I wanted to share some of our favorite HEALTHY air fryer meals. Since they cook quick, compared to a regular oven, it is a great appliance to work into your healthy eating game.

I've added these Everything Bagel Chicken Tenders into our meal rotation for next week {because let's be honest, I have three bottles of that delicious seasoning in my cupboard at all times}. Plus, I hope to add some of that crispy broccoli as a side.

And....those buffalo cauliflower bites....I'm a sucker for anything buffalo sauce, so this will be a nice way to get in another veggie without really feeling like you are eating a veggie, right?

I take up baking when life gets a bit overwhelming.

Do you?

Something about zoning out and measuring out precise ingredients takes your mind off other things. You should try it - works like a charm!

The weather has been dumpy and less than desirable {so much snow, so many days below zero degrees}, which means delayed school days and canceled school days, plus some of us just feeling under the weather.

All of that makes me BAKE.

Buttermilk Butterscotch Scones

I had the desire to bake and got to thinking...when was the last time I made scones? I did a quick search of my own blog {it's like my own online diary!} and found out it was 2018. Three years ago was way to long in my opinion!

I've made a variety of scones of the years and I'm always amazed how people think they are hard. Trust me, they aren't! Remember I write a blog full of uncomplicated recipes. Scones are not complicated. They require one bowl, some cold butter, in this case buttermilk and whatever variety of add-in's you want.

Oh, and an oven, but that's pretty straight forward.

Don't forget a sharp knife to cut them into these pretty triangles! It's like pizza, but in dessert form. Start to finish done in 30 minutes.

Some of the favorites I've made over the years include my Maple Glazed Pecan Scones, my Blueberry Sour Cream Scones and my Chocolate Cranberry Scones {which I always make after the holidays when we have leftover fresh cranberries}.

And today I added another favorite flavor - butterscotch!

Buttermilk Butterscotch Scones

Most people who like caramel, like butterscotch and most people who like butterscotch like caramel - they are a bit inter-changeable.

Since so many people like both, I figured they'd be awesome in these scones. If you make a good scone they are thick, buttery, rich, dense {in a good way}, not overally sweet and really just the best breakfast item on any platter.

Some scones are glazed and trust me I love those versions too, but the butterscotch chips in these give them enough sweetness. They are so good!

Buttermilk Butterscotch Scones

This recipe makes eight big scones - perfect for any family breakfast with a few leftovers. You can also make a batch and freeze the raw dough. Just place the cut up scones on a baking sheet and freeze. When frozen, place them in a sealed freezer bag. They will stay fresh for up to 3 months.

When ready to bake, simply pull out of the freezer and let them come to room temperature for 30 minutes. Then bake as usual!

My kids did back flips when they saw these coming out of the oven. They like any baked good so it really doesn't take much - but they have been sharing them for breakfast with a side of yogurt everyday since.

Buttermilk Butterscotch Scones

Buttermilk Butterscotch Scones

These buttery, flakey, delicious scones are loaded with butterscotch chips and are a great breakfast or brunch treat! They melt in your mouth and will be a hit on any breakfast table.

Ingredients

  • 2 1/2 cups flour
  • 1/4 cup sugar
  • 1 T baking powder
  • 1 t salt
  • 1 stick unsalted butter, cold and cut into cubes
  • 2/3 cup buttermilk, cold
  • 1 egg, plus another whisked with a splash of water for an egg wash
  • 1 T vanilla extract
  • 1/2 cup butterscotch chips

Instructions

  1. In a large bowl combine the flour, sugar, baking powder and salt.
  2. Cut the cold butter into cubes and add into the flour mixture. Using a pastry blender or fork work in the butter until it resembles coarse crumbs., then toss in the butterscotch chips.
  3. Whisk together the cold buttermilk, one egg and vanilla extract. Pour this into the dry butter/flour mixture. Gently stir with a spatula until just combined and all is moistened.
  4. Tear off a piece of parchment paper and place it on a baking sheet lightly dusting it with flour. Scrape the dough onto the floured parchment paper and quickly pat the dough into a ball with floured hands. Gently press down into a 6 inch flat circle.
  5. Place the baking sheet in the freezer and preheat the oven to 400 degrees.
  6. When the oven is ready, remove the baking sheet from the freezer and gently slice the scones like a pizza, into 8 triangle pieces.
  7. In a small bowl whisk together the other egg with a splash of water. Brush the tops of the scones with the egg wash.
  8. Bake the scones for 20 minutes or until lightly golden.
  9. Eat fresh from the oven or keep in an air tight container for 2-3 days.

Let's all just agree that homemade pizza is a MUST in all our lives, correct?

I've been making it for years and I've tested and tried about every single homemade pizza dough out there - and let it be said I'm not one to turn down a store bought crust and call it good either. There are so many great recipes out there, plus brands have really amped up their store bought game.

Let's just say pizza makes a weekly appearance in our house.

This month the Iowa Beef Council and I wanted to showcase a simple, easy homemade pizza for the one big romantic holiday of the year.

Why you ask?

Well, it's been a year. So many of us are making more meals at home and even more of us are getting the kids involved. It is still nice to get out to a restaurant, but this year for Valentine's Day, many are staying home. Why not get a tad bit more creative and create this Beefy Heart Shaped Pizza?

It really is simple and only requires a few more minutes of your time.

Whether single and hoping for love, empty nesters or a busy young couple with kids hanging on your hips - this pizza recipe is fun!

Also, I kept the toppings fairly simple on this one with cooked ground beef {go here for a ton of beef recipes and tips} and a little crushed red pepper flakes for spice. Ground beef is an easy and affordable go to topping for pizza - one that most everyone loves and it's also a great way to get some extra protein in those little ones.

My pizza crust recipe comes together {with rising time} in just an hour {although I often leave mine on the counter for the day until dinner arrives}. It's a tad sweet, hearty and creates a delicious thicker style crust.

This pizza crust recipe also makes TWO good sized pizzas. Feel free to make both {one for the kids, one for the adults, perhaps?} or save the other half of dough for later in the week, covered in the fridge. It can also be frozen!

When it's time to make that special heart shaped pizza - take your time. Gently start it in a heart shape and with your fingers gently start pushing outward {you can also use a rolling pin}. Once you have a big heart shape, start pinching and crimping the edges of the dough {just like you would for a pie crust}. 

This will create a raised crust on the edges and will help keep all your toppings inside!

If you have a baking steel, feel free to bake your pizza on that {it will give it a super crispy crust}. I personally don't have one yet {enter tears} so I bake my pizzas on a piece of parchment paper directly on the oven rack.

It also creates a nice, crispy crust!

Oh, and don't forget to oil up that crust with seasonings before baking...it gives the pizza great flavor! The combo of the sweet crust, sauce, crumbled beef, cheese and seasonings makes this a super delicious homemade pizza!

And look - the heart shaped dough holds up well in the hot oven and comes out a perfect little heart when done.

Beefy Valentine's Day Pizza

Beefy Valentine's Day Pizza

Such a fun way to show love with pizza! A sweet, crispy seasoned crust is topped with sauce, ground beef, spices and cheese. Simple directions show how to make it into a cute heart.

Ingredients

Crust Ingredients
  • 1 cup warm water
  • 1 1/2 t yeast
  • 1 1/2 t salt
  • 1 T sugar
  • 2 T oil
  • 2 T butter, softened
  • 3 1/4 cup flour
Pizza Toppings
  • 1/2 cup pizza or marinara sauce
  • 1 t red pepper flakes
  • 3/4 cup ground beef, cooked and crumbled
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 T olive oil
  • 1/2 t garlic salt
  • 1/2 t Italian seasoning

Instructions

  1. In a large bowl pour in the warm water and yeast, stir to combine.
  2. Whisk in the butter, salt, sugar and oil. Let it sit for 5 minutes.
  3. Mix in 2 cups of the flour and stir to combine.
  4. Add in the remaining flour to form the dough. Remove the dough from the bowl and knead with your hands until you have a smooth ball (about 5 minutes).
  5. Spray the bowl with cooking spray and place the dough back into the bowl and cover with a lid or plastic wrap. Let the dough rise for at least 60 minutes (you can let it go much longer - up to 5-6 hours).
  6. When ready to assemble the pizza, preheat the oven to 475 degrees.
  7. Cut a piece of parchment paper to fit the size of the pizza, spray lightly with cooking spray and set aside.
  8. Remove the pizza dough from the bowl and cut it into half (this dough will make two pizzas - you can place the other half in the fridge for up to 7 days or freeze it if not using right away).
  9. Gently roll the dough into a ball and form the dough into a heart (see photo above in the post) and place on the greased parchment paper. From here very carefully start pressing the dough out with your fingers or push the dough out on each side of the heart with a rolling pin. Take your time to keep the heart shape.
  10. Once you have a large heart shaped pizza, crimp the edges of the dough (like you would a pie crust) so that it makes a nice thick, crimped edged crust. This will also allow the ingredients to stay inside the heart.
  11. Brush the crimped edges with olive oil and season with the garlic salt and Italian seasoning.
  12. Continue to assemble the pizza - sauce, red pepper flakes, beef, cheese and beef.
  13. To bake place the parchment paper on a baking sheet and use it to slide the pizza into the oven (so the pizza is baking directly on the parchment on the oven rack). Bake for 10-15 minutes or until golden and bubbly.
  14. Serve warm with additional pizza sauce for dipping.

So my husband purchased a Big Green Egg over a year ago {it's a smoker that literally looks like a big green Easter egg}. Honestly, I wasn't really on board. Did we really need a smoker? Can't we just buy a new grill?

Needless to say it was purchased and now it's one of his favorite hobbies. What can we cook on the smoker this weekend?

I have a tendency to stay away from it {it's kinda his thing}, but I do help prep the food going on and often take photos of the foods coming off for all my Instagram friends.
