How are y'all handling the summertime heat?

Do you get a bit cranky like me?  Yet love it too?  I understand, that doesn't make much sense, but it's ME to a tee.  My day usually goes a bit like this.

Early morning walk {to beat the heat}.  Lots of complaining and staying in the morning air conditioning {to beat the heat}.  Reading on the back deck to work on my tan {because the sun feels like gold from being inside all morning}.  Coming inside swearing I'm not going back out there till tomorrow {because, sweat}.  Sitting at night time ball games watching my kids play {my favorite thing} and exclaiming what a beautiful night it is to all my friends.

It's a vicious circle.

Saying all of this, I really do love summer.

I just like to complain too.

A few days ago I needed a "treat" for the kids {who am I kidding, me too} for the multiple times they were coming in and out of the house, running around, often in swimsuits and needing a snack every few minutes.

So I came up with this Frozen Summertime Yogurt Bark!  Just two main ingredients and as many toppings as you want.  In my case I added three {granola, dried blueberries and coconut}.  Any kind of nuts, other fruits or even some chopped dark chocolate would be amazing.

We love their yogurt.  You'll often find me eating it for breakfast with a sprinkling of granola on top after I've consumed some morning coffee.  I had no doubt featuring their yogurt in this recipe would be easy and fun - its in my fridge anyway!

When my kids were super little and just learning to munch on real food, I would often freeze little "yogurt bites" for them.  They loved snacking on them, especially when they were teething.  Basically this is the grown up version.

With a nice sprinkling of yummy add-ons.

Frozen Summertime Yogurt Bark

This summertime frozen treat is great for the kids and adults! Healthy, fun and easy to make, it will be your new summer treat.
prep time: 5 minscook time: 12 hourtotal time: 12 hours and 5 mins

ingredients


  • 32 oz  Kalona SuperNatural Vanilla Yogurt
  • 1/4 cup honey
  • 1/2 cup granola
  • 1/2 cup dried blueberries
  • 1/2 cup sweetened coconut

instructions


  1. Line a large rimmed baking sheet with foil and spray with cooking spray.
  2. Combine the yogurt with the honey and stir to combine.  Pour the yogurt mixture onto the lined baking sheet, spreading flat with a spatula.
  3. Sprinkle the granola, dried blueberries and coconut onto the yogurt.
  4. Place the baking sheet flat in the freezer and freeze for 12 to 24 hours.
  5. Remove from the freezer and break into pieces.  Eat and serve immediately.  Place the remaining pieces into a freezer bag or container and keep frozen.

NOTES:

Feel free to sprinkle on ANYTHING you want!  Nuts, fresh fruit, chocolate chips,  whatever you like.

It's summer break!

Either you're crying or rejoicing, right?  The kids are home, it's steamy outside and we are all going from here to there at warp speed.  Summer is busy!

It's totally contradictory.....we want to relax, to go on vacation, to unwind now that school is out and to spend most of our time outside.

In reality we often spread ourselves too thin by overscheduling and planning TOO many things to do.  So basically we need help.  We need products and gadgets to get us those these three crazy, busy months.  I went ahead and picked some of my favorites for you, my dear readers {a few of which I have!} and put them all together in this nice, fancy blog post.

Let's face it, summer isn't all sunshine and rainbows.  Guess what, it's rains!  And those darn little munchkins don't always want to stay inside on gloomy days.  My three kids each have a pair of boots that are dedicated for messy play or outside chores.  These Kamik Stomp Boots can stay outside and easily get hosed off when dirty!

One Pot Skillet Lasagna

I often crave lasagna, but am unwilling to take the time to make it.
So naturally I created this short cut version!

I believe summer is all about short cuts.

Any chance I get to take advantage of squeezing in extra time here or there, I'm game.  I'm using my slow cooker, my instant pot and my freezer like they are going out of style.  

When in the winter I'd be boiling potatoes in a big pot, in the summer I'm getting them done in my instant pot in 12 minutes.  When in the winter I'd be long-simmering soups in my stock pot all afternoon, now I'm ditching ALL THE SOUPS and I'm sticking with cold pasta salads, grilled chicken salads and eating egg salad by the spoonful.

I want my foods to be easier and quicker.

Thus, I invented this One Pot Skillet Lasagna.

Because lasagna cannot be forgotten between the months of May to September.

Between these short cuts, we are in full-on summer mode around here.  How about you?  What is your summer like?

Our kids started swim lessons this week, because of course, these next two weeks are about the only time I could fit them in, in between camps and vacation.  And for those that know us well, the older two are doing awesome {ages 8 and 7} and our young little stubborn butterfly {age 4} has given me a few headaches.

Let's just say she is attached to the hip of me and when she was given a young high school girl as her teacher she flat out refused.  I'm guessing the Lord was hovering over me that day in high humidity with sweat covering me in all the wrong places, when suddenly another older woman {I'll refer to her as the swim whisperer} appeared out of no where, took my daughter's hand and let her into the pool like there was no issue at all.

You know how they say dogs can sense dog lovers?  It was like she could sense this lady was a Grandma to 6 and loved kids.

In case you are wondering...everything is going well as long as I stay hidden and she doesn't see me, at which point, all swimming comes to a hault and SHE IS DONE.

Let's just say after that first day of swimming hell, this is a dinner I wanted to come home too.  Something comforting, yet easy to make.

Here's the thing - I still want lasagna in the summer, I just don't want the fuss of assembling it all, nor do I want to have my oven set at 375 degrees for one and a half hours.

Therefore I created this One Pot Skillet Lasagna.  IT TAKES EXACTLY THE SAME.  Maybe even better?  It's a bit more saucy, yet still full of loads of cheese.  Which, of course, makes the lasagna, right?

When I announced I was making lasagna on a random Tuesday night in between ball practices, you'd thought I'd just announced the cure for cancer.  

You have time for that?

While yes, I do have time for that.  You guys, it was a big hit.  A huge hit.  A milestone hit.  I have this list of continious meals that scroll through my head on a weekly basis of meals my family loves.  These tacos are on the list, so is this baked chicken, plus our favorite homemade pizza.  Guess what?  This One Pot Skillet Lasagna is getting put on the mental list.

One Pot Skillet Lasagna

Ever want lasagna for dinner without all the hassle? This short cut version comes together quickly and tastes delicious!
prep time: 5 minscook time: 25 minstotal time: 30 mins

ingredients


  • 1 lb. pork sausage
  • 8 oz. lasagna noodles, broken in pieces
  • 15 oz. can diced tomatoes
  • 32 oz. jar marinara sauce
  • 1 cup fresh spinach leaves
  • 1 cup freshly shaved Parmesan cheese
  • 1 1/2 cups mozzarella cheese
  • 2 T freshly torn basil leaves
  • 2 T freshly torn parsley leaves
  • 2 T olive oil

instructions


  1. Heat a large rimmed skillet to medium-high heat.  Drizzle in the olive oil and cook the pork sausage.  Crumble with a spoon and cook until no longer pink.  Drain off any excess grease.
  2. Add in the following ingredients: tomatoes, marinara sauce, lasagna noodles, spinach, herbs and Parmesan cheese.  Stir to combine, making sure the lasagna noodles are covered in the sauce.
  3. Turn down the skillet to medium heat, cover and let cook for 15 minutes.  Stirring half way through to make sure the noodles don't stick.
  4. Top the lasagna with the mozzarella cheese, cover again and cook/steam for another 10 minutes.
  5. Remove from the heat and allow to sit for 10 minutes.  Serve warm.

Peanut Butter Magic Bars

I needed a little magic in my life so I created these bars!
Like a typical seven layer bar, but with some added twists.

The kids have offically been out of school for one week and my brain is already mush.  What day is it today?  Who has showered?  You have a game tonight?  When does your camp start?  And they call me an organized mother.

We are all going in different directions and it's rare we're ever in the same place.  Our first week has been filled with sweltering heat {go figure}, playing outside in the hose, attending basketball camp, lots of bike rides with friends, ball games and later nights with the hopes that all children will stay in their beds past 7 a.m.

It happened once.

One child slept in until 8:15 a.m. and I assumed the world was coming to an end.  I was THIS CLOSE to going in and checking on her, but instead refilled my coffee cup and enjoyed the peace.

Summer break is hard.

On another note, I've been trying my best to eat better.  I've drastically cut carbs {ahem, all breads are my weakness} and sugar {again, super weakness}.

So why am I posting this decadent dessert bar?

Because.

I'm the owner of this food blog and I do what I want.

And because with the kids home, I'd rather have them eat something homemade with memories of me baking for them, than some stale, crappy, fake dessert from the grocery store.  So I got all daring and whipped up these bars yesterday.  I allowed myself a very small corner piece {because, well, recipe development}, gave them one each for two days in a row and per usual delivered the rest out.

And let's be honest, when the kids are underfoot baking relieves some stress for me.

Do I have any peanut butter lovers out there?

I mean, honestly you should all be silently raising your hands.  The only people who aren't are allergic and I'm fairly certain they'd raise their hands if they could.

I not only drizzled melted peanut butter over the crust, but then I dropped a WHOLE bag of mini Reese's peanut butter cups on top too.  It's just enough to blend in with the buttery, Nilla wafer cookie crust and the millions of mini chocolate chips.

And a little sweetened condensed milk to bring all the stickiness together.

After these bars are cooled, cut them into bars and stick them in the fridge {especially in these hot temps}.  Keeping them chilled is FABULOUS.  They hold together well, do not get too hard and basically become that "thing" you dream about all day at work.

Get real fancy and plate one of these with a scoop of vanilla ice cream on top.  My eldest asked for that exact dish last night after dinner, but I declined on the ice cream.  I mean, I was already rotting his teeth out with this bar.....I didn't want to take it too far.

I'm all about balance.

Peanut Butter Magic Bars

There truly is MAGIC to these bars. An incredible layered treat that is a bit crunchy, a bit sticky and full of chocolate and peanut butter!
prep time: 10 minscook time: 25 minstotal time: 35 mins

ingredients


  • 2 sticks unsalted butter, melted
  • 2 cups Nilla wafer cookies, crushed
  • 1/4 cup sugar
  • 1/4 cup melted peanut butter
  • 1 can sweetened condensed milk
  • 1 cup mini chocolate chips
  • 1 cup mini Reese's miniature cups

instructions


  1. Preheat the oven to 350 degrees.  Grease a 9x13 baking pan with cooking spray.
  2. In a bowl mix together the melted butter, crushed Nilla wafers and sugar together.  Pack this mixture into the bottom of the pan.
  3. Drizzled the melted peanut butter over the crust and sprinkle on the mini chocolate chips, then drizzle the sweetened consdensed milk over that.
  4. Cover the rest of the crust with the mini Reese's cups.
  5. Bake for 25 minutes and allow to cool completely.
  6. Cut into 24 bars and keep in the fridge.  They serve best when chilled.
