I MADE HOMEMADE BAGELS.

There are so many things I'm loving right now.  I'll get back to these bagels in a moment.  Stay with me.  Hang in there.

First.  I just finished The Crown on Netflix.  Loved that one.  If you enjoyed Downton Abbey, then you need to watch The Crown, but now I'm wondering how in the bloody heck do I wait until NEXT YEAR for the 3rd season?  And I'm sitting here pondering, is the Queen watching too?  What does Kate Middleton think?  Are all the story lines accurate?  I have so many questions.

Second.  I am enjoying using the My Fitness Pal app.  It got lost in between my Goodreads and Instagram app for many, many months, but I'm happy to report I'm back on track.  Something about tracking everything I eat bodes well for me.  Now, if it just had an alarm go off each time I entered, "Starbucks Grande Latte."

Third.  I've never been one to be big into beauty products but I'm singing the praises of my CocoRoo Coffee Bean Scrub.  It's heavenly.  And a bit weird too.  I keep mine in the shower and scrub the heck out of my 36 year old face each morning.  If you love the smell of coffee then you'll love this scrub.  Anything to help with wrinkles and aging.

And before you look at the ingredient list and start shouting, THERE ARE MORE THAN TWO INGREDIENTS!

Just calm down.

There are two MAIN ingredients.  The other two {baking powder and salt} are just spices in my opinion.  But what about the egg wash you say?  Well, it technically it isn't needed, but it does give them a nice golden brown color.  And what about the Everything Bagel seasoning?

Well, now you're just getting picky.

I first saw this recipe over on Skinnytaste.  She has a great video on making them {see it HERE}.  I did change up a few things - I used a whole egg for the wash, just plain salt versus kosher salt and didn't even bother with the parchment paper {as I didn't have any} and found out that a greased cookie sheet worked just as well.

I was scared.  Oh, how I was scared.

Bagels seems super duper intimidating to make.  I mean, that is what those big city New York deli's are for!  Never in my dreams did I think that flour and Greek yogurt could make a bagel and that I'd be sampling one in 35 minutes.

I was beyond thrilled at how these turned out.  They are SOFT and CHEWY.  They smell amazing while baking.  They stay fresh for daaaaaaaaaays.  They are perfect for breakfast {fried egg and bacon if you please!} and even better at lunch {ham, spinach, veggie cream cheese is my favorite}.

Have I hooked you yet?  Will you try these?

And here's the thing.  Next time I am going to try a Cinnamon Sugar version.  Then maybe a Cinnamon Raisin version.  Prehaps even an Asiago and Parmesan Cheese variation?  

I could go on forever.

2 Ingredient Everything Bagels

I never knew I could actually make homemade bagels in my OWN HOME! And to think there are essentially only two ingredients. These are soft, chewy and just down right perfect.
prep time: 10 MINScook time: 25 MINStotal time: 35 mins

  1. Preheat the oven to 375 degrees.
  2. Grease a cookie sheet heavily with cooking spray.
  3. In a bowl sift together the flour, baking powder and salt.
  4. Add in the Greek yogurt, stirring together with a spoon.  It will come together to form a soft dough.
  5. Sprinkle additional flour on the counter top and knead the dough about 15 times, just enough to become elastic, yet not sticky.  Adding more flour while kneading if needed. 
  6. Form the dough into a ball and cut into four equal pieces.
  7. Taking one piece of dough, either roll it into a rope and form into a circle or stretch the dough out a bit breaking through the center to make a hole.  Lay the four bagels on the greased cookie sheet.
  8. Beat the egg and brush the egg wash onto the four bagels.  Then liberally season with the Everything But the Bagel Seasoning.
  9. Bake for 25 minutes until golden brown.  Allow to cool for 10 minutes.

These bagels will stay fresh for up to 3 days in an airtight container or baggie.  I use Trader Joe's Everything But the Bagel Seasoning, but there are many others out there - including King Arthur Flour's Everything Bagel Topping.  Or you are welcome to make your own.  It generally is a combination of sesame seeds, sea salt, dried minced garlic, dried minced onion and poppy seeds.

If there is one food item I've found that kids love, it's the glorious meatball.  Throw them on pasta, stick them in between a hoagie bun with melted cheese or eat them plain.  Every single way works to get your kids to eat.

Chocolate Chip Zucchini Snack Bars

For all my friends reading who are parents, do you sometimes feel like your brain has turned to mush?  

Just this morning I was dragging all three kids to the dentist {before 8 a.m., mind you} and while making sure they were all in tow and not getting hit by a car in the parking lot, I turned around and yelled,"Shut the shoe!"  Quickly followed by, "Shut the keys!".  when finally my brain turned on and I yelled, "Shut the door!".

There are days I find myself stumbling over their names, calling them everything under the sun until I finally land on what I painstakenly thought about all those months in utero and spit out the right one.  Other days I have three kids talking to me at once that it's like the verbal Olympics trying to keep up.

I guess this is all just one big brain crossword puzzle for me...right?  Which is good they tell me.  It's good to test your brain daily.  To get it ready for later in life when I'll have problems remembering my own name.

Which brings me to these Chocolate Chip Zucchini Snack Bars.

I needed something on hand - already baked up, waiting for me - that could easily be stuck in a lunchbox or grabbed by an eager hand {me} when a little pick-me-up was needed.  I didn't want one more snack "I had to think about".  You see, I baked these up and they granted me their grace for a full week.

I tend to need a snack at either 3 p.m. or 8 p.m.  Those are the times that hunger me the most, especially when doing my best to eat healthy and stay on track.  I wanted to bake something fairly healthy, but still seemed indulgent.  I replaced the oil with unsweetened applesauce, replaced the all-purpose flour with whole wheat flour and kept it moist by adding a little sour cream.

As sour cream, is just what makes life GREAT.

These turned out soft and chewy, just what I wanted.  Using my big jelly roll pan {you can get yours HERE}, makes them quick to bake and fairly thin.  If you prefer something thicker you can certainly use a traditional 9x13 pan, but they would need to bake longer.

My kids loved them.  Utterly loved them.  They had no idea they were loaded with zucchini or healthy oils and whole wheat flour.  They just cared about the mini chocolate chips, as with any child, the chocolate always wins out.

Let's be honest.  The chocolate won me over too.  Next time I'm going to use dark chocolate chips {because they are my favorite} and really, when Mom is losing her mind, give her something she wants.

These bars are the perfect, go-to snack for your kids or yourself! They stay fresh for a week and have the perfect soft, chewy texture, just enough for that sweet bite needed, without over indulging.

ingredients:


  • 3/4 cup sugar
  • 1 cup unsweetened applesauce
  • 1/2 cup sour cream
  • 3 eggs
  • 2 cups all-purpose or whole wheat flour
  • 1 t. baking powder
  • 1/2 t. salt
  • 1 T. cinnamon
  • 2 cups shredded zucchini, drained
  • 1 1/2 cups mini chocolate chips

instructions


  1. Preheat the oven to 350 degrees.  Grease a 10x15x1 jelly roll pan with cooking spray.
  2. In a stand or hand held mixer combine the sugar, applesauce, sour cream and eggs until smooth, scraping down the sides of the bowl.
  3. Sift in the baking powder, salt, cinnamon and flour, stirring to combine.  Fold in the shredded zucchini and then stir in the chocolate chips.
  4. Spread the mixture into the pan and bake for 25 minutes or until springy and a toothpick comes out clean.  Allow the bars to cool.
  5. Cut into bars and store covered for up to one week, or freeze for up to 2 months.

Skillet Taco Mac-n-Cheese

Because I love tacos and because I love mac-n-cheese, I combined the two.
This 30-minute one pot skillet meal is yummy and delicious!

The kids have been back to school for a couple weeks now, but I still feel like we are a bit on Christmas break hangover.

Between late starts {lovely Iowa winter weather}, random days off for teacher in-service days and the kids still feeling entitled to eating like it's Christmas dinner for every meal, my patience has been thin and emotions have been running high.  Plus, when temps are hovering around zero, we're all couped up and walking all over each other.  It's really quite fun.

Since the indulgence of the holidays, I've been trying to keep meals simple, easy and relatively healthy.  We've eaten a lot of taco salads, grilled meats and veggies and brothy soups.  I've enjoyed it immensely.  I think after about two weeks of it the kids were starting to hate me.

My oldest gave me a pouty look one afternoon after school asking what was for dinner.  Honestly, I had no idea, other than I had one pound of leftover taco meat from the night before staring back at me in the fridge.

He asked for mac-n-cheese.

Again, I had taco meat.

Light blub.

When I make my homemade macaroni at home, I often so a one pot skillet version where the noodles cook right in the milk and water and no draining is involved.  It's genius really.  Less dishes for me to wash and it makes the creamiest sauce you'd ever imagine.

So that is what I made that night for dinner.  I appeased myself using up leftovers and I delighted my eight year old by announcing mac-n-cheese was for dinner.

The family gobbled this stuff up.  Imagine a gourmet version of Hamburger Helper {you know that stuff we lived on in college?}.  I got all fancy and sprinkled on extra salsa, tomatoes and shredded lettuce, but you could certainly leave it plain if that's your thing.

And guess what?  To reheat, simply add a splash of milk.  It brings the creamy cheese sauce back together again and does not taste like a leftover at all.

Skillet Taco Mac-n-Cheese

All the flavors of a taco...in mac-n-cheese! Double bonus, it's a one pot meal and comes together in 30 minutes.
prep time: 5 MINScook time: 20 MINStotal time: 25 mins

ingredients:


  • 1 lb. taco meat
  • 2 cups 2% milk + additional 1/2 cup
  • 1 cup water
  • 2 cups shredded Colby cheese
  • 1 T. salt
  • 1/2 t. pepper
  • 1 chopped tomato
  • shredded lettuce (optional)
  • salsa (optional)
  • 2 cups elbow macaroni
  • 1 T. dijon mustard

instructions


  1. Heat a large rimmed skillet to medium-high heat.  Pour in 2 cups of the milk and the 1 cup of water.
  2. Add in the salt and macaroni.  Continue to stir the macaroni in the milk/water/salt mixture, being careful to not let it stick to the bottom.  Bring mixture to a low boil.  As the macaroni cooks, the liquid will thicken and make a creamy sauce.  This takes about 10 minutes.
  3. Once the liquid has evaporated by half and the macaroni is cooked, add in the dijon mustard and additional 1/2 cup of milk.  Continue to stir.
  4. Add in shredded cheese, stirring to melt.
  5. Finally add in the taco meat to heat through.
  6. Serve warm, straight out of the skillet, topping with additional tomatoes, salsa and lettuce (optional).

How's the New Year treating everyone?

I have to admit the first two days of the New Year were less than stellar for me.  A lot of miscommunication with various school events put me in an awful mood.  But, I kept getting up and tackling another day and eventually the week got better.

I am loving my new Nourished Planner.  It's keeping me organized, it's tracking our meals and I love it.  I'm also head over heels with my new daily devotional.  Written by one of my favorite authors, Shauna Niequist, it's called Savor - check it out if you are looking for one.  Both of these items helped that first week to get a little better.

As with everyone I'm trying to eat better.  What?  Grabbing one of the kid's pancakes as I run out the door isn't a good option?  Could have fooled me.

I love oatmeal and often make big batches of my steel cut slow cooker version.  But often, our fridge is FULL and I don't feel like making room for that big batch, know what I mean?

I had eaten overnight oats before at a friend's house, but honestly had never made it for myself.  Basically, instead of cooking the oats {and other various add-ins}, you let the oats steep in liquid overnight in the fridge and they get soft in the process.

The end result is genius!

What I love about this recipe is that you can add in whatever you like.  I added diced apples, some coconut and a bit of brown sugar to sweeten it, but seriously add whatever you enjoy.

Cranberries + Almonds

Cinnamon + Pears

Walnuts + Sliced Bananas

Honestly, the list is endless.  I don't care if you grab all remaining bits of your fruit basket, dice them up and throw them in.

It all works.  Do whatever you want.

What you get the next morning is glorious.  Chewy, soft and nutty....I LOVE THIS STUFF.  I think I prefer eating my cold, straight out of the fridge, topped with a bit of good quality granola, but I do know people who enjoy heating it up a bit in the microwave for a warmer cereal.

That works just fine too.

This recipe makes ONE JAR.  I did this on propose.  I think it's best to make just one and see if you like it.  There is no use making 7 jars for the week and it not being your favorite thing.  If you like that first jar, then make more!

I'm incorporating these into my weekly breakfasts.  Maybe three a week.  I'll rotate some form of egg type breakfast in between.  If I eat the same thing every day I get cranky.  BORING.

Overnight Breakfast Muesli Jars

Overnight oats are easy to assemble and even better to eat! Healthy, full of fiber and great to eat on the go. Try any combination you like!

ingredients:


  • 1/3 c. dry old-fashioned oats
  • 1 1/2 t. ground flaxseed
  • 1 1/2 t. chia seeds
  • 1 T. coconut
  • 1 T. brown sugar
  • 2 T. chopped apples, pears, dried cranberries, raisins, etc.
  • 1/2 c. milk
  • 2 T. heavy cream or coffee creamer
  • dash of vanilla extract

instructions


  1. Wash and dry a pint glass jar with lid, set aside.
  2. Add dry ingredients to the jar - oats, flaxseed, chia seeds, coconut, brown sugar and diced fruit.
  3. Slowly pour in the milk, cream and vanilla.
  4. Give the jar a gentle shake/swirl to let the wet ingredients soak into the dry ingredients.
  5. Refrigerate overnight.
  6. In the morning, eat straight out of the jar, giving it a healthy stir, or pour into a bowl.  Can be topped with additional fruit, granola or nuts.

notes

I prefer eating this cold, straight out of the fridge, but it can be heated in the microwave for 30 seconds for a more warmer cereal.
