Love an egg roll, but don't have the time to make them?
These Teriyaki Chicken Egg Roll Bowls are quick and flavorful.
I have been serving my family some version of egg rolls bowls for years. Of course we all love a good, traditional egg roll when visiting a Chinese restaurant, I even have an awesome recipe for my homemade version, but honestly they take a bit of time and prep and we don't always have that!
I'll often make the filling with ground pork, even ground beef, but this time I wanted to make it a bit more special and jazz it up with chicken - a teriyaki version!
I cut up and sliced the chicken nice and thin (just like Chinese restaurants do) to make it feel like takeout. That also allows the chicken the cook up really quick - this truly is a fast dinner!
And for the veggies all you need to grab from the store is a big bag of shredded coleslaw mix. One that is already prepared with different kinds of cabbage and shredded carrots. Again, since it is all shredded so thin, it cooks up incredibly fast.
This whole dinner cooks up in about 20 minutes!
The added flavor of teriyaki sauce, fresh garlic, plus a little sweet and sour sauce really gives this dish a ton of flavor, while still keeping it fairly healthy.
We like to serve it alongside white rice, but we've also been known to just eat it straight out of the skillet before it even reaches a plate.
It's that good!
Can you add any veggies you have on hand needing to get used up in this dish? Absolutely!
Anything that sautés up quick works - broccoli, snap peas, sliced peppers - really anything works. You are welcome to add in whatever your family enjoys. I usually keep it simple with the cabbage mix as that is what my family loves, but feel free to get creative.
