I was rained out from the farmer's market yesterday, but thankfully I spread the word that I'm making trips to my hometown and former college town, so I have many orders to deliver later today. Thanks friends!
I wanted to show you last nights version of taco lasagna. If you are a follower, you've seen this dish before, but last night I got lazy. Thawing meat sounded like a huge chore, therefore I left it out. And it turned out great!
Better yet, the husband, must not have even noticed. I didn't get the inevitable question, "where's the meat?".

Meatless Taco Lasagna
tortillas
vegetarian refried beans
salsa
sour cream
black beans, drained
cheddar cheese
This is easy folks, just treat it like a normal lasagna. Spread some salsa on the bottom of an 8x8 baking dish. Layer tortillas, refried beans, black beans, sour cream, salsa, cheese, in that order until you've reached the top of the dish.
Bake at 375 degrees for 30 minutes. Top with shredded lettuce, tomato, whatever your little heart desires!
