Apple Peanut Butter Cookies

Soft and chewy with tender, sweet apples are a fun surprise.

I first had these amazing cookies when a friend of mine brought them over after our second baby was born. At the time I had two kids under the age of 18 months and I was tired and just making it through one day at a time.

Did I mention I was tired?

When she walked in the door with these cookies it was like a life line.  I handed her the baby and she handed me a plate of cookies.  A fair swap!

Here's the thing - no one ever thinks of putting chopped up apples {albeit very finely diced} into cookies. It's just not the norm!

But golly, it works so well in these cookies.

Loaded with peanut butter, oats, ground flax seed and brown sugar for sweetness - the diced up apples compliment the cookie - and trust me when I say, EVERYONE will ask for the recipe.

Apple Peanut Butter Cookies

I make these cookies fairly large and the whole batch makes two dozen. They are slightly crispy around the edges and have a soft, chewy, tender middle. Just the way a cookie should be in my opinion. Nothing too crispy, nothing too soft.

My kids {who never turn down a cookie} also did NOT turn down these. I baked them while they were at school and they were the perfect after school snack for them.

Be careful, I turned my back for a second and they were back for more! Put them in a lockbox? Slap their hands with a yard stick while you hover watching? I'm not really sure, but I promise your kids will want more than one.

Now, I know these are not marketed as a holiday cookie, but they'd be great on your Christmas cookie platter. Since you keep the skins on the apples, you get to see nice bits of dark red throughout the cookie....heck, add in a few slices of granny smiths and you'll get red & green!

And since they store so well {they stay fresh in an airtight container for daaaaaaaaaaays} they are perfect when traveling for the holidays.

Apple Peanut Butter Cookies

Apple Peanut Butter Cookies

These chewy & soft peanut butter cookies have sweet tender chunks of tart apples in them - which quickly make them a family favorite!

Ingredients

  • 3/4 cup peanut butter
  • 4 T butter, softened
  • 2 cups brown sugar
  • 1 t vanilla extract
  • 2 eggs
  • 1 3/4 cups flour
  • 2 t baking soda
  • 1 t salt
  • 1 cup old-fashioned oats
  • 1/4 cup ground flax seed
  • 1 cup finely diced apples (I prefer a tart variety - Honeycrisp, Granny Smith)

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a stand mixer cream together the butter and peanut butter until smooth. Add in the brown sugar, vanilla and eggs one at a time, until incorporated.
  3. Sift together the flour, baking soda, salt and ground flax seed. Gently add into the creamed mixture.
  4. Fold in the oats and diced apples.
  5. Place nine heaping spoonfuls of the dough onto a greased cookie sheet and gently flatten with your hand.
  6. Bake for 12 minutes. The edges will be sightly browned with a soft center.
  7. These cookies stay fresh in an airtight container for several days.

  1. I was hesitant about the apple at first, but it works! I also made a batch without, and it worked. Don’t over bake. And they’re excellent straight out of the freezer. They’re still chewy! I will be baking again!
