Cucumber Salsa

This salsa is fresh, unique and delicious!  Bring it to a party or make a bowl for yourself.  
Either way, it's great.

I'm kinda in between being a cucumber lover and hater.  I don't like them on my salads, but I love eating them with a smear of chive and onion cream cheese.  I love, love, love their pickled cousin with lots of dill and garlic but I would never, ever grab one out of my garden and take a bite.

So enter in my dilemma when my cucumbers overtook my garden.  I knew this vine plant had a tendency to "spread", but geesh...they are everywhere!

I've picked, picked and picked some more.  I've given many away, made 5 {count them, 5!} batches of my refrigerated dill pickles and lastly I made this salsa.

And I still have so many more staring at me on my kitchen counter and in my back yard.  They just won't stop.  I debated slicing one up one morning after a lousy night of sleep to put on my eyelids, but then remembered how I did that once in high school and it made my eyes look even worse.

So, enter in a cucumber recipe.

But, it's a GREAT one!

Being on the "edge" about cucumbers this salsa made me a bit nervous.  I knew the husband would gobble it down, no remarks, like almost everything, but I really, really wanted to like it too.

I was worried!

But after the first bite I was hooked.  Yes, you can taste the fresh cucumber, but it becomes a bit "pickled" from the apple cider vinegar.  The tomatoes, jalapeno, onion and seasoning just round it out to a really great salsa.

A really, really great salsa.

I plan on making a batch {or at least taking all the ingredients along with me} for vacation next week. We are headed to our annual week at Lake Okoboji.


Last year I had a 3 month old baby attached to me, so this is my year.  My week to relax, sun bathe, read a great book, chill with some drinks and just unwind.

So, anyway, I'm taking this salsa along.

Cucumber Salsa

2 large or 3 medium-sized cucumbers, finely diced
1 large tomato, diced
1 small onion, finely diced
1 jalapeno, finely diced
1 pkt. dry ranch seasoning mix

1.  In a bowl combine and stir together all ingredients.  Cover and refrigerate for at least 2 hours before eating.
2.  Serve with tortilla chips.
3.  Also great served fresh over chicken or fish!
