Hi friends, how's your week?

I realize I'll be talking about cheese dip here in a bit, when later February often isn't a "cheesy dip topic", but whatevs, I do what I want.

Let's see...it's only Wednesday, but it's already been a week of mishaps here for me.  You know, just the usual Mom stuff.  I attempted to bake a new bar recipe on Sunday and it spilled ALL OVER my oven and remained a doughy mess.  Fail.  I had to run our taxes to our accountant yesterday and my 3 year old threw an open water bottle at me while I was driving.  That was fun.  I made this Moscow Mule that I showcased on Instgram a few days back at 1:00 in the afternoon, not only because it was due for a sponsored post, but because I needed a drink.

Mothering kids is HARD and I only have three of them.  Hats off to you mamas with more than me.

Since I'm a stay-at-home-working-mom and I often share my mom struggles with you guys here on this blog, like for example, kids for the love of Pete, JUST GET ALONG, which seems to be an everyday occurance - I'm guessing that is why I make calorie-ridden cheese dip in mid-February.

This is the dip of my dreams.

A few scoops of it with a nice glass of wine on a Sunday night brings a smile to my face and a calmness to my heart.

If you are just learning, it doesn't take much to make me happy these days.  Currently it is a combination of watching the Olympics + good food + being with my friends and keeping my household somewhat sane.

I originally made this dip for the Super Bowl.  Remember that game a few weeks ago?  I've since made it again, because....food blogger.

Don't judge.

My favorite way to inhale this dip, is this.  Go ahead and picture my plate in your head.  Ready?  Here we go.  Lay a warm corn tortilla on your plate.  Spread on this dip, then some grilled, marinated chicken, then a bit of guac, quite possibly some sour cream, ending with lots of extra pico de gallo and shredded lettuce.

Roll it all up and watch your worries melt away.

Grab a marjarita and you'll forget everyting till morning.

When I first served this the kids went BANANAS.

And let me be clear, they are usually hit and miss on cheesy dips.  I often get the usually cries, "it's too spicy" or "this tastes funny" or my favorite "why are we eating dip for dinner?"

It's like they don't even know their own Mother.

But when I served this dip, there was silence.  Lot of chips going in without the usual complaining.  It was heaven!  I won!  Send me all the awards please.

This Slow Cooker Beef and Bean Dip should be your new favorite.  1) you can use the slow cooker {it's okay This is Us fans, it's fine} 2) all you do is dump and stir 3) if you have mild mannered children you can pass this off as dinner.

And here's the big finale.

If you're making tacos, double the meat and you've practically got this dip made already.  I prefer using ground beef taco meat in this dip as it gives it so much more flavor.  Whenever we have leftover taco meat {chicken can be used to!}, I throw it in the freezer and keep it for instances like this.

If by chance you just have plain hamburger cooked up, then just go ahead and add some taco seasoning to the mix.  It all works the same!

Slow Cooker Beef & Bean Dip

Here's your party dip of the year! An easy, dump-everything-in cheese dip that will quickly become a crowd favorite.
prep time: 5 MINScook time: 4 hourtotal time: 4 hours and 5 mins

ingredients:


  • 1 lb. ground beef taco meat
  • 8 oz. cream cheese
  • 15 oz. can refried beans
  • 8 oz. can diced green chiles
  • 1 cup sour cream
  • 2 cups shredded Colby Jack cheese
  • 1 cup pico de gallo or salsa

instructions


  1. Grease a large 6 to 8 quart slow cooker with cooking spray.
  2. Place all ingredients into the slow cooker, stir together and set to LOW.  Cook for 4 hours or until cheeses melt, stirring occasionally.
  3. Serve warm with tortilla chips, with additional pico de gallo on top if desired.
