Homemade Granola....and Pita Chips?

Going through my recipes the other day, I found one for "Lori's Granola". Not sure if my good friend, Lori, came up with this recipe, or if she got it from someone else.....regardless it is yummy (and healthy)! It can be eaten plain as cereal or as a topper on oatmeal, yogurt, even ice cream! Trust me, this version will have way less sugar and preservatives (none!) than any store bought kind that has probably been sitting on the shelf for a month.


















Lori's Homemade Granola
(this recipe makes a BIG batch, so I recommend halving it to start out)

4 c. oatmeal
1 c. wheat germ
1/2 c. flax seed
3/4 c. brown sugar
1/2 c. coconut (Lori's recipe doesn't call for this, but I added it in mine)
1/2 c. chopped pecans
1/2 c. sliced almonds
1 T. cinnamon
1 1/2 t. salt
1/3 c. canola oil
1/2 c. honey
1 T. vanilla
1/2 c. water

Preheat oven to 300 degrees. In large bowl mix together oatmeal, wheat germ, flax seed, brown sugar, pecans, almonds, cinnamon and salt. In a seperate bowl combine wet ingredients. Pour wet ingredients over the dry and mix until coated. Spread in large, greased baking pan or roasting pan. Bake for 45 min, stirring every 15 min. or until toasted. Let cool completely before storing in an airtight container.

P.S. - Below is my new favorite snack! Stacy's Pita Chips.....yum....much healthier than a potato chip! And they were on sale today, even better!

  5. I would love to try this! However since Im a Celiac, I will have to find a replacement for the wheat germ.. any ideas??
