Crockpot Italian Chicken

So yesterday was actually a semi-productive day. Laundry, walk, errands run, caught up on my shows (Real Housewives of NYC & Jamie Oliver's Food Revolution), and dinner simmering in the crock pot.

Anyone else just love hulu.com? I am probably the only one on the face of the earth without DVR or Tivo, so I have to rely on the Internet to get caught up on my missed shows! And yes, that includes my trashy T.V. (Real Housewives...) To only have the money they have! Not really...

As mentioned I had dinner in the crock pot by 8 a.m. yesterday. This recipe comes from The Peppered Pantry. Another great little food blog that I came upon awhile back, check it out! This is the perfect dish for mom's on the go and families on the run, as it cooks while you are doing other things! (i.e. watching T.V on the Internet)

Crockpot Italian Chicken
boneless, skinless chicken breasts (use as many as you need, depending on your family size)
1 jar of your favorite spaghetti sauce, or homemade
1 T. minced garlic
parmesan cheese
mozzarella cheese
spaghetti noodles

Spray interior of crock pot with cooking spray. Pour some spaghetti sauce on the bottom, enough to cover the bottom of the pot. Lay chicken breasts in (I put mine in frozen). Sprinkle garlic over the chicken breasts, and pour more spaghetti sauce in, enough to cover the breasts. Cook on low for 6 hours, or high for 4 hours.

When chicken is done, pour the spaghetti sauce out of the crock pot and into a baking pan. Lay chicken breasts in pan, sprinkle with parmesan cheese and cover with the sliced mozzarella cheese. This can then be baked right away, or put in the fridge if you are not eating until later (that is what I did!).
Broil on HI for just a few minutes, until cheese is bubbly. Serve with a side of spaghetti.

Can you say de-lic-ious? Such an easy dinner and sure to please everyone. Especially kids! And healthier than your typical chicken parmesan, as the chicken is not breaded.

I'm wondering is there anyone out there that doesn't use or have a crock pot/slow cooker?

  1. I do not have, and will never have, a slow cooker. In fact, I've gotten them as gifts and re-gifted them. I hate food all stewed together. My mom was the slow cooker queen and that really turned me off.

    Whenever I see a good slow cooker recipe, I usually modify it to make it oven-ready rather than in a slow cooker. Your chicken looks good and it could easily be modified to the oven.

  2. That looks great. I haven't used my crockpot in ages, and now that the weather is nice, I probably won't again until winter. Maybe I need to figure out some summer crock pot recipes.

  4. I use my crock pot all the time! It is so convenient! My meals rarely come out stewy unless I am making stew :)
    With this recipe I would use my homemade tomato sauce with lots of added veggies! Yummy!

  8. We have a DVR and I LOVE it. It is such a time saver to have 30 min. shows be only 20 min. and 1 hr. shows be only 40 min. It's amazing how much time commercials suck out of your life.

    Yummy this looks delicious Ally! Pioneer Woman just did a giveaway for crockpots and as I browsed through a few of the comments on my scroll down I saw that a lot of people didn't have any, or weren't good at it! My mom has always had one and she got me one shortly after I moved in here, so I only went a few months without one. I think it is foolproof - I think there has only been 1 recipe I've made in mine that I wasn't 100% pleased with. It's also a lifesaver for budget cuts of meat. I love to be frugal so the help of making them tender saves tons.

    Right now on my DVR? Diners, Drive-Ins, and Dives, Anthony Bordain no reservations, Man v. Food, Top Chef Masters - and tonight I have Biggest Loser AND American Idol!

  10. I don't use my crockpot enough - I think I'm scared to after an unfortunate catastrophe. I should give it another whirl. Thanks for the great recipe. Can you leave a crockpot on for up to 8 hours? I think that might have been my problem last time.
