Buffalo Chicken Pizza

Of all the buffalo things I've made, I have never once made buffalo chicken pizza.  Until this past weekend.  I mean, what is wrong with me?  Right behind the iconic buffalo wing, I'm pretty sure the pizza version comes in second place.

It wasn't until I cleaning up breakfast messes on Saturday, already thinking about lunch (yes, us moms always have the next meal in mind...) that I thought, well the kids will be having some homemade chicken tenders, so why don't I toss some of them into some wing sauce and make a pizza?

Yes, please!

I also had a container of bleu cheese crumbles in the fridge, waiting to be sandwiched into bleu cheese burgers, but this pizza came first.

Thank god, as Saturday was a long day with the munchkins and I was needing a slice of pure, sinful pizza.  It hit the spot.

Not to mention, the homemade crust.  Please don't be scared of homemade crust people.  It comes together in 5 minutes and only has to rise for another 45 minutes.

It gave me time to - wipe messy mouths, change a diaper, fill sippy cups, break up a toy fight, throw in a load of laundry and even....even....pick up random outside toys that were scattered about the back lawn making us look like the Beverly Hillbillies.

I'm the queen of multi-tasking.

Buffalo Chicken Pizza (makes one good-sized individual pizza)
{Printable Recipe}
pizza crust
2 chicken tenders
1/4 c. buffalo wing sauce
1/4 c. ranch dressing
1 c. cheese (combo of bleu cheese, cheddar, mozz and parm)

Preheat oven to 400 degrees.  If you have a pizza stone, preheat that as well (that will give you a crispy crust!)  Prepare pizza dough as directed.  If using fresh dough, stretch with flour to individual size.  Lay on hot stone.  In a small bowl combine wing sauce and chicken tenders, set aside.  Spread on ranch dressing, 3/4 c. of the cheese, wing-sauced chicken tenders and remaining cheese.

Bake for 12-15 minutes or until golden brown and crispy.

Gosh, I'm drooling again just looking at this photo.  Drool.  Drip.  Wipe.

Oh and before I forget!  The winner of my Pasta Fits prize pack is....

Ally, you had me at garlic gravy! My last meal?? I'd have to see I'd love a cheese and salami tray with all different kinds of cheese with garlic toast points - I could eat that every day and never get sick of it!

Guys, if you haven't checked out her blog you need too.  Absolutely hilarious.  Plus great eats.  Email me Biz!
