Crispy Chicken Caesar Pizza

I love taking a classic food and turning it into a great tasting pizza.
Caesar salad, my friends, is now PIZZA!

I'm just going to apologize in advance if you are sick of pizza recipes and pumpkin recipes. For whatever reason that is all that I have on the brain.

Like this morning when our house was mass chaos.  I woke up late, the dog puked in the kitchen {on the rug...why can't he do it on the linoleum?}, the kids were moving about as fast as sloths and my happiness factor was tettering on something close to miserable.

But then I got all the kids to school and I walked into a convenience store and like the heavens were opening up, I treated myself to a slice of their amazing breakfast pizza and a hot coffee with pumpkin spice creamer.

Everything came full circle.

Y'all pizza makes me happy {and a hot drink, but that's a different post}.

I know making pizza should be a Friday night thing.  Or a party thing.  Or a date night thing. But sometimes I get all crazy and make it on a Thursday at noon for lunch.

That is what happened with this pizza.

I picked up the little one from preschool, got her settled with lunch and then got to work on frying bacon, baking chicken tenders and assembling this pizza.

Thirty minutes later I was sinking my teeth into deliciousness.

Golly, I've made every pizza under the sun.

Yeah, I can be boring and just throw some sausage, mushrooms and cheese on the pie and call it good, but more often than not I bring it up a notch.

Remember my Chopped Egg & Chorizo Breakfast Pizza?  Or my Big Mac Cheeseburger Pizza?  Or there was that time I piled on barbecue pulled pork, banana peppers and pineapple for an incredible pie that even my kids devoured.

This food is like my 4th child.

You've got to give this one a try if when you walk into a restaurant and the first thing you order is a side Caesar salad.  

Get real crazy and top this one with some crunchy romaine - why not?  It will most definitely make you feel like it's a bit healthier.

Crispy Chicken Caesar Pizza

Love a great Caesar salad? Me too! Plus I love pizza, so I combined the two. Crispy chicken, salty bacon, Caesar dressing and Parmesan cheese baked to perfection.

INGREDIENTS:


  • 1 store bought thin pizza crust
  • 1 c. Caesar dressing
  • 8 breaded chicken fingers
  • 6 slices of bacon
  • 1/2 c. shredded Parmesan cheese
  • 1 1/2 c. shredded mozzarella cheese

INSTRUCTIONS:


  1. Preheat the oven to 450 degrees. Lay the chicken fingers on a sheet pan and when the oven is pre-heated bake for 11-14 minutes or until crispy. Dice into chunks and set aside.
  2. While the chicken is baking, pre-heat a rimmed skillet to medium-high heat. Dice the bacon into chunks and fry until crispy. Drain the bacon on a paper towel lined plate and set aside.
  3. Place a pizza stone in the hot oven to heat up while assembling the pizza.
  4. To assemble the pizza, spread half of the Caesar dressing on the pizza crust. Sprinkle on half of the crumbled bacon and crispy chicken. Top with the Parmesan cheese and half of the mozzarella. Then layer on the remaining bacon, chicken and mozzarella.
  5. Bake the pizza for 13-15 minutes or until crispy and golden. Remove from the oven and drizzle with additional Caesar dressing. Cut into slices and serve warm.
