Today is our oldest child's 8th birthday. How can that be? It seems like just yesterday when we had just moved to a new town, had barely gotten settled into a new home and then I labored long and hard on September 13 to get that baby boy into the world.
All 9+ pounds of him.
He's been a joy to bring up - we like to call him Mr. Serious at times, a definite rule follower, sports lover and possibly inventor in the making, happy birthday buddy! He requested fried shrimp and my homemade egg rolls for his birthday dinner. Albeit a bit random, but totally him.
He had handed me a list of all his favorite foods and then had proceeded to cross out each one after much pondering to reveal his final two choices.
Gotta love that boy.
So today will be spent with me bringing him Subway at school for lunch and taking a few minutes to eat with him, youth group at church, football practice and then finally....his DINNER.
But let's venture back a day and talk about these baked subs.
He loved them too!
But let's be honest there isn't much he doesn't like other than mushrooms, peppers and honestly...I cannot think of anything else.
These Hot Italian Baked Subs are a busy mother's dream! It only takes about 10 minutes of prep and dinner is being tucked into the oven. Ten minutes later? You are ready to eat!
You can even prep them the day ahead, wrap them tightly with plastic wrap so they don't dry out and dinner is super close to being ready for the following night.
I don't know about you...but we just ended our oldest' baseball season and now we are diving head first into football season, and did I mention the husband is his head coach? Well, as you can imagine two nights each week are filled with THAT.
Which means I need easy dinners for when those boys come home and are STARVING.
The seasoned butter, gooey cheese and salty meats sandwiched between soft hoagie bread will make your eyes roll back in your head.
Without a doubt.
These subs are terrific for an easy dinner or can just as easily be wrapped up and taken on the road for tailgating or long days on the ball field. Try wrapping them in foil and keeping them on the warm setting in your crock pot. That works too!
If you have a pepperoni hater in your house {I do, she loudly exclaimed that at dinner the night I served these}, simply leave whatever meat they loathe out or replace it with one they do like. I'm not about making separate meals for my kids, but if a simple swap out helps to elevate the whining I'm all in.
It's all about surviving the dinner hour on a Tuesday without breaking out a bottle of wine.

This is the perfect, simple meal to assemble for another busy family who could use a pick-me-up. And don't ask if you can bring dinner over, just bring it. The smile on their face will make your day.

Hot Italian Baked Subs

All your Italian cold cut favorites in a hot melted sub! Salami, ham, pepperoni, mozzarella and Italian seasonings + BUTTER. These are a family favorite.
INGREDIENTS:
- 6 hoagie style sandwich buns
- 12 slices salami
- 12 slices ham
- 12 slices large pepperoni or 24 slices small pepperoni
- 1/2 stick unsalted butter, softened
- 1 T. Italian Seasoning
- 1 t. garlic powder
- 6 slices of mozzarella cheese
INSTRUCTIONS:
- Preheat the oven to 350 degrees. Line a rimmed baking sheet {8x8 or larger} with parchment paper and set aside.
- In a small bowl combine the softened butter with the Italian seasoning and garlic powder.
- To assemble the sandwiches, spread some of the Italian butter on one side of the hoagie bun. Layer on two slices of pepperoni {or 4 if using small slices}, 2 slices of ham, 2 slices of salami and one slice of mozzarella cheese. Fold up the sub and cut in half. Lay the halved sandwiches on their side in the parchment lined pan.
- Bake the subs for 10-12 minutes or until just warmed through.
